"You’ll want to arrive at Fogón very hungry. This restaurant (with two locations in Palermo Soho and Palermo Viejo) takes the Argentine barbecue experience—an asado—and turns it into a nine-course tasting menu. A meal here is generous in all the right ways—plenty of grilled meat, free-flowing wine, and servers that feel like friends by the end of the meal. The space is dark and intimate—you sit at a wraparound counter with front-row seats to the glowing fire in the center of the room. Each course arrives hot off the grill right in front of you: charred eggplant, glazed provoleta, blood sausage, chorizo, and, of course, multiple types of steak. At the end, they bring out whatever’s left from earlier courses (it’s totally acceptable to grab a bone with your hands, if you were wondering).
