"There’s been so much italian beef talk recently, but it’s time for sausages to re-enter the Chicago spotlight. Irving Park’s Wurst Behavior, with its excellent homemade brats, sausages, and dogs, is going to make that happen. You can taste all of the advertised fillings in their kimchi dog, mushroom truffle brat, and yes, italian beef sausage. Even without their overflowing toppings, these meats are smoky, tightly compact, and served on large toasted buns that hold strong after multiple bites. Most everything costs $10, so this place is ideal for a small group meal featuring lots of meticulous cutting. Or a solo sausage trip that’s heavy on comfort and light on the wallet." - Nick Allen
