"One chef, seven seats, and nigiri that justifies the agony—and eventual ecstasy—of getting a booking at Clerkenwell’s Sushi Tetsu. The experience is fairly traditional—the lone chef nips, presses, and folds each piece of fish in front of you, while his wife tops up your sake and asks you about your day. The fish is carefully selected depending on what’s best at the market, so expect a three-hour trust fall involving things like perfectly marbled tuna nigiri and yellowtail sushi that’s worthy of sonnets. Seats at Sushi Tetsu are obviously always limited.
