Everyone's right—Hey Bagel's just-baked showing is worth the hype - Review - Seattle - The Infatuation

"What used to be a semi-clandestine bagel pop-up is now the best thing to happen to University Village. Hey Bagel’s rip-and-dip showing features a shiny shell across the top, a resounding crunch, and a steamy center of bready fluff that resembles the middle of a sourdough boule. Bialys, with toppings like sweet caramelized onion and bruleed cheese, are just as crisp. And the schmear variety knows no bounds, as you’ll find a tub of humble scallion rubbing elbows with Biscoff-chocolate-espresso-bean. Aside from minimal mishaps like offputting raspberry curry schmear or an occasional undercooked clunker, the steady flow of crusty just-baked bagels makes this spot a bonafide hit. They’re open until 6pm, which is an admirable bagel feat, but they sell out much sooner than that. The best bet is to show up on a weekday morning before the other U-Village stores open. That way, you can secure easy parking, a hot bagel, and a good spot in line (if there is one). Food Rundown Everything Bagel One of the very best around. Rip and dip with confidence. Salt Bagel Between the crackly exterior and big fat salt rocks, this is essentially an Oktoberfest pretzel that’s socially acceptable to eat for breakfast. Excellent. Bialy See Jane. See Jane run…to Hey Bagel and forget to order a stunning caramelized onion and cheese bialy. Don’t be like Jane. Spicy Scallion Schmear It’s hard not to compare this schmear under a microscope to Mt. Bagel’s. We prefer the latter, but we’re also a huge fan of the subtle heat backed by cool tang here. The Whole Lox Schmear This has the leading players of a lox bagel in spreadable form: smoked salmon, capers, dill, and raw onion. Just brush your teeth before talking to anybody. Raspberry Curry & Hot Honey Schmear The combination simply doesn’t work. Please refrain." - Aimee Rizzo
