It’s part laboratory, part Victorian-era high-society lounge, where people gather to sip creative drinks from the same guys as Rye next door. The bartenders know their way around a centrifuge and sous vide, clarifying citrus and making flavorful infusions for cuisine-inspired drinks, like a chicken piccata riff featuring chicken bouillon gin and green peppercorn vermouth.
