Their version starts with giant slices of fresh sandwich bread thickly layered with ham and positively doused in cheese sauce. What makes this place more delicious is the vegetarian iteration with sautéed mushrooms, nutty Comté cheese, herby tarragon, and a touch of mustard to offset the richness. The spinach one with two kinds of cheese is umami-rich bliss and is never a bad idea, too. Can’t choose?
