"When it comes to empanadas, there are two schools of thought. Keep them warm in a case after cooking, or cook them to order. If a restaurant asks you to twiddle your thumbs for a couple of minutes while your dough is frying (or baking), it's most likely worth the wait. The best example is this Colombian takeout spot in Corona, where the fresh-out-of-the-fryer empanadas are freakishly crisp and filled to the brim with things like spinach and ricotta, or perfectly seasoned shredded chicken.
