"Ramen Takeya in Fulton Market has a small but mighty menu of three great chicken paitan bowls, plus a vegan option. And whether you get their regular, spicy paitan, or spicy miso, you’re in for a delicious bowl of rich broth, chewy noodles, and marinated pieces of chicken or pork. Unfortunately, eating here is like being trapped in a gray shoebox. The tiny 12-counter-seat subterranean spot has a minimalist look that feels less considered and more like, “Hey, let’s just put a ramen shop in this old omakase spot.” (Which makes sense, considering this place used to be Omakase Takeya.)
