"How Far In Advance Should You Book? Two weeks for a prime time, same day if you’re OK eating in the lounge or at 5pm. When Ernest first opened, you were lucky to snag a 9:30pm reservation for their seafood-forward dishes. Now, getting your hands on their ikura and beef tartare or the koshihikari rice topped with seasonal produce is a lot less stressful.
