Tostaditas de ceviche have just the right amount of crunch, heaped with citrus-marinated whitefish, diced cucumber, mango, avocado and slivered fresh chili for a zesty one-two punch. Enchiladas de mole arrive with generous chunks of roasted chicken and enveloped in a dark brown mole poblano that is sweet with ripe plantain and balanced by bitter chocolate and myriad other ingredients.
