Gozu is a carnivore's mecca, paying homage to the cow with a Wagyu tasting. Only one cow is ordered at a time and great care is taken to respect the animal by highlighting all possible forms, but don't expect a simplistic parade of meats though. Albacore tataki arrives with tuna slices seared on one side, then finished counter-side with whiskey vinegar, Wagyu garum and kale "nori" for crunch.
