For instance, nonna might not countenance the amount of butter that goes into a dish of orecchiette with sausage and rapini—but the indulgent results are unlikely to elicit any complaints. Scrupulously fresh seafood is a highlight, whether it be an albacore tuna carpaccio with celery and capers, or tender grilled octopus with marinated artichoke.
