"An intimate fine-dining establishment on Duxton Hill, this one-MICHELIN-starred spot was opened in 2014 by chef and co-owner Paul Longworth with partners Jerome Desfonds and Alice Low-Ang. From the start, it leaned on word of mouth, eschewing PR hype and flashy marketing to focus on the food and service, and in 2016 MICHELIN inspectors were won over by its “sophisticated cooking, deeply rooted in French classical cuisine but subtly and intelligently updated without recourse to gimmicks.” Longworth’s cost-conscious approach to sustainability and deep respect for guests’ hard-earned money shape the restaurant’s ethos, driving a determination to give diners the very best; more recently, visibility has been boosted through social media, events, and chef collaborations while keeping the focus squarely on the cuisine." - Rachel Tan
