In the classic-style dining room, where the decor eschews fashionable trends, enjoy typical Piedmontese cuisine lightened by the occasional modern twist. The restaurant’s contemporary version of “paniscia” is a good example – a type of risotto with beans, salami and vegetables, in which the latter, instead of being cooked directly with the rice, are added on top of the mixture in the form of vegetable cream, giving the dish an attractive splash of colour.
