This Luxury Collection hotel near the waterfront was designed by architect John Pawson, who converted t 19th-century French Hospital into a thoroughly modern boutique-style luxury hotel, while preserving details from a multitude of eras, all the way to the 13th-century wall that bisects the lobby.
