On the Grid : AMASS

"At Amass they describe the dining experience in one word: spontaneity. The former chef at Noma, Matthew Orlando is the owner of Amass, so if you go eat there expect really delicious gourmet food, but still with a down-to-earth-felling. The restaurant itself has an edgy yet beautiful personality and an amazing view. Most of the vegetables and herbs on your plate to come straight from their private garden out back." - Blad

Aamanns 1921

"A visit to this appealing city centre restaurant is made all the more enjoyable thanks to its original stone arches and friendly, attentive service. Lunch and dinner both focus on excellent traditional smørrebrød made from quality produce. A homemade, sustainable approach is taken as they grind and mill their own flours, marinate their herring for 6-12 months and gather the herbs for their snaps." - Michelin Inspector

Eat Like a Dane with Copenhagen’s Best Smørrebrød Sandwiches | Eater

"An expansion of the deli concept that serves as a contemporary smørrebrød touchstone at lunchtime: locals quietly nibble while newcomers receive guidance on how to order, eat, and pair each open-faced sandwich with snaps, beer, or wine. The menu rotates with the seasons (for example, pickled summer tomatoes appear in autumn), offering a measured, produce-forward take that reflects the current Copenhagen smørrebrød scene." - Molly Hannon

22 Best Restaurants in Copenhagen

"A bright, lofty space with a neutral palette and modern chandeliers, Aamanns 1921 is an ideal spot for lunch or dinner. At lunchtime, the restaurant serves its famous smørrebrød, or Danish open-face sandwiches; at dinner, the menu packs in traditional Danish dishes—plus more smørrebrød, if that's your thing. In fact, known as the "smørrebrød king," owner Adam Aamanns has created focused his menu on traditional smørrebrød made with a twist. But don't worry: Even purists would approve." - Mary Holland

I went with a local friend, and it’s clear why this place is so well-regarded. They specialize in smørrebrød, the Danish type of tartine with varieties for every taste: fish, meat, veggie. They’re also very accommodating, offering gluten-free and lactose-free versions of their smørrebrød. A special bonus: they even have their own Aquavit (Danish schnapps), which adds a nice authentic touch to the experience. The staff is lovely and the restaurant is spacious, though I’d still recommend making a reservation.

The shrimp open sandwich is heavenly good! Even the shadow is artistic! I wanna go back and try it again It’s weird though, that although there are empty seats, walk in guests were told that it was fully booked. Until I finished my meal, the seats were still empty. Maybe they thought everyone wanted a 2-3 hour proper dinner so there wasn’t enough time for that.

What a stunning restaurant - modern, elegant, and filled with natural light. Aamanns 1921 was recommended to us by a Danish friend, and as visitors from Australia, we were very pleased with our experience here. The food was outstanding - beautifully presented, rich in flavour, and clearly made with high-quality ingredients. Our waitress was not only attentive but also very knowledgeable, taking time to explain the dishes and share insights. It was a true fine dining experience with a Nordic twist. Highly recommend to anyone visiting Copenhagen!

Our first visit to Aamanns 1921 was a delightful introduction to Danish cuisine, and it exceeded all expectations. Situated in a beautifully restored heritage building in central Copenhagen, the restaurant offers a modern yet warm ambiance, featuring high ceilings, brass chandeliers, and natural wood accents. The highlight was, of course, the smørrebrød—traditional Danish open-faced sandwiches reimagined with creative flair. Each bite was a harmonious blend of textures and flavors, showcasing the chefs’ innovative approach to classic dishes. Additionally, the evening menu presented modern takes on traditional Danish fare, such as the acclaimed krebinet with chanterelles and lingonberries. Service was attentive and knowledgeable, enhancing the overall dining experience. The restaurant’s commitment to sustainability is evident, with 60–90% of ingredients sourced organically, earning them a Silver Organic Dining Label. For those seeking an authentic yet contemporary taste of Denmark, Aamanns 1921 is a must-visit destination in Copenhagen.

Google
We had the 8-course tasting menu. Apparently the dishes were designed by the restaurant to be shared. This concept worked reasonably well for the starters, but it did not felt right for the main course, which was unfortunately served cold. Overall, the execution of the menu didn’t quite meet our expectations. The service was warm and professional. However, our table was placed in a corner and we were often overlooked, which made it difficult to get the staff’s attention at times. All in all, a mix of thoughtful ideas and good service, but the experience didn’t fully deliver.

At first, the receptionist was quite warm and welcoming -- she kindly explained the menu to us and then let us decide if we still want to dine in. In terms of the food, the tomato with cottage cheese was refreshing, the steak was decent, the dessert was pleasant. However, the smoked salmon on the open sandwich was way too salty for us, but my guests tried their best to wash the food down with lots of water. When asked about the food, we gave our honest opinion and the waitress/receptionist said she could've asked the kitchen to make another dish had we not finished the salty salmon. Then came the fish, it was still a little on the salty side but we didn't mind. However, the fish skin was completely burnt and tasted very bitter---one of my guests had to go rinse his mouth with water in the restroom after tasting the bitter fish skin. So the waitress/receptionist came again and we mentioned that the food was still a little salty for us although much better, and pointed out how bitter the fish skin was. Her attitude took a real turn after hearing our comment this time. She made the speculation that we may be used to bland food, and then dismissed our comment about the fish skin by stating that there's Yuzu on the fish. I believe I can tell the difference between Yuzu zest and burnt fish skin. The rest of the evening really went downhill as the smile and warmth went away. Why ask for comments on the food if you're not open to criticism? The whole experience was quite unpleasant and disappointing considering this is a Michelin starred restaurant.

We walked in at Thursday lunchtime and were lucky to get a table without any reservations. Restaurant was v busy. We opted for the set lunch which was alright. Good place to try the danish signature open face sandwich.

Google
Fabulous smørrebrød! This place was recommended by a local, and we’re so grateful. Everything was phenomenal on the lunch tasting menu, but the herring and beef tartare really stood out. The desserts were also perfect.

Yelp
Aamanns is a very well known name in Copenhagen for making the most delicious and presentable Smørrebrød (a Danish open faced sandwich). And while you are at it, don't forget to try a flight of Snaps (or Schnapps). The snaps are strong but served in small glasses - the size of (or slightly larger than) a typical shot. Flavors range from earthy to fruity but paired with the Salmon and Herring - uh too good! We got two Smørrebrød: Icelandic cold smoked salmon, pickled cucumber, dill, horseradish and the Curry herring, egg, apples, crème fraîche, onions, pork fat crisp. Both were presented beautifully and tasted fresh and delicious! They recommend trying 2-3 Smørrebrød per person but instead of that we got the Herring platter with the fish prepared in four different ways. It is served with pork fat which was unexpectedly delicious. We also got the flight of Snaps - you can choose 4 from 6-8 I can't recall exactly. We got the Rye bread (classic), Lovage, Apple-horseradish-lemon, and Grilled lemon and all paired so well with the Salmon and Herring. If you can have only 1 meal in Copenhagen, I would suggest make reservations and head to Aamanns 1921.

Yelp
Unfortunately, I had a poor experience here. It was due to communication issues which I'm usually forgiving about but it really left a bad taste in my mouth because the waitress clearly blamed me. I ordered two items off the menu - the plaice with shrimp and the chicken salad. I ended up getting served the plaice with shrimp, which was good but instead of the chicken salad, got the plaice with vegetables, which was not for me at all. I actually thought it was the chicken one I ordered, but saw that it wasn't later one - the chicken one looked way better. That was a bummer. If you are going for the food, Aamanns is fine. I didn't have a good experience but that could be a one off. I did feel like they nickel and dime you for everything (got charged two water carafes even though I didn't ask for the second one). Personally wouldn't come here again.

Yelp
Had a really lovely lunch meal here. We sat at the bar and ordered serve items. Everything was fresh and tasty. The food was a little slow and the staff wasn't the friendliest, but I would absolutely come back to eat here again. And definitely try the home made schnapps if you go.

Yelp
Went here for the Smorgasbords, ended up ordering the tasting menu, and could not have been happier with the overall experience. The food and service was superb- the produce in particular tasted incredibly fresh and they executed some creative dishes with unique flavors. This place is Michelin recommended for a reason- highly recommend, go before they get their star!

Yelp
Perfect spot for lunch while visiting Copenhagen during our 6 hour layover! Food was delicious and service was excellent. We had the salmon and the shrimp toasts. The salmon was the standout. Feeling good about our decision to dine here trying out some classic dishes. Easily walkable from the train station. We were fortunate to be seated right away as we did not have a reservation. I understand they have a Michelin star rating and it is well deserved.

Yelp
The elite of all smørrebrød restaurants. I managed to get a reservation and yes it was worth visiting. Wow! This is a Michelin star restaurant and certainly deserves the recognition. Denmark is famous for its open faced sandwiches. The sandwiches here are next-level. They are works of art, in flavor and aesthetics. The place is mid-sized with a capacity of about 50 I'd guess. Guests are seated close together which makes the place cozy. I loved that as I got speaking with people on the table next to me. Good for me but there's no privacy if that's something you need. The sandwiches are as great as they look. Delicious. Far more filling than I expected and very laden with goodies. My favorite part was the elderberry flower drink. So soft and subtle, with a hint of sweetness and a floral punch. I loved it! When in Denmark, you must try smørrebrød, and this is an epic place to do that.

Yelp
Very nice take on the traditional smorrebord. The service is excellent. New plates and utensils between courses. They recognize 3 per person, my husband and I each ordered two and shared and it was plenty of food. I got the mushroom and the marinade on the mushrooms was perfectly seasoned and really brought out the flavor. The salmon was delicious as well and probably my favorite of the four dishes. My husband got the beef tartare which he enjoyed but it isn't my thing. We also got the cod and it was delicious as well. I loved the texture of that dish. We picked different schnapps to drink as well. My grilled lemon schnapps went well with the mushrooms and salmon. My husband got the dill which was nice. The only improvement could've been if the knives were more serrated. Even though they gave us shaper knives it was still hard to cut through.

Yelp
We landed and arrived a few hours later at a pre planned Boxing Day lunch at Aamanns 1921. We had previous communication with the restaurant and our reservation was flawless. The setting is bright and open with modern design. Tables are spaced apart and noise level was moderate, all creating a conducive environment for dining. Service was a little slow to start (no one came to our table) but once we called our server over, if flowed perfectly. Perhaps in Denmark one needs to call the server, I am not sure. After the initial delay of about 20 minutes, service was flawless. The menu is expansive with amazing offerings. We wanted to sample Smörrebrod and chose 3; hand peeled shrimp, Icelandic salmon and mushroom salad. We also tried house made Schaaps and my daughter had a local IPA. Our server helped me choose a Schaaps and helped me learn a little about how to enjoy. We also wanted to try Risalamande, a Danish cherry rice Christmas pudding. It was ambrosial. Everything was beyond our expectations.

Yelp
While on holiday in Copenhagen, I knew I needed to try the smorrebrod and this is the place. The space is large, bright, and welcoming - almost as welcoming as our server. She was very helpful, answered our questions, and made great recommendations. We tried a variety of smorrebrod and enjoyed all of them. My favorite was the mushrooms. While we tried 3 each, 2 was plenty for us. We also tried a couple flavors of schnapps. They were definitely stronger than any drink I'm used to but I'm happy I tried them.

Yelp
Lovely attentive service Nice vibe Excellent open faced sandwiches Would definitely recommend A bit pricey

Yelp
Food is excellent .staff are friendly and efficient and lovely atmosphere . We had open faced sandwiches and a herring board ..very very good
google avatar

Yelp
I will preface this by saying that, I understand open faced sandwiches are popular in Denmark and this location is supposed to have the best, but I found the ones at this establishment to be over sauced yet bland. Keeping in mind a 3 star review, we tried 5 types: roasted beet (favorite), pickled herring (second favorite), pan fried plaice (third favorite), shrimp salad, and chicken salad (both had too much mayo). Make a reservation and expect long wait times between courses. The waitress was able to recommend a nice pairing of their house cordial which they are known for. My overall impression was: very pretty food but missed the mark on flavor. I personally would have skipped this meal and gotten a hotdog down the street.

Yelp
This restaurant serves what I would characterize as nouvelle Danish fare. We ordered a la carte with 3 small plates per person and it was more than enough for each of us though we admittedly shared a couple of servings of their delicious sour dough bread with both a whipped butter and hummus spread that were wonderful. Every dish was beautifully plated, masterfully prepared with clearly fresh, quality ingredients. The restaurant itself is beautifully decorated with an airy uncrowded atmosphere and staff that couldn't do enough to please without being intrusive. Our server, Victoria, was knowledgeable and was super helpful with respect to my lactose intolerance as well. She checked in regularly to ensure that everything was to our satisfaction and she and the kitchen paced the meal perfectly allowing us to enjoy each dish. From the exquisit green salad to the open face (Smorredbrod) smoke salmon and plaice dishes to the tartare to the sushi like mackerel to the perfectly prepared frickadellen, tender chicken dish and mullet we were served one great dish after another. Their prices are quite reasonable for a Michelin restaurant though by no means inexpensive but worth every penny for a great dining experience that will be hard to match and we have had some wonderful meals during our 10 days in Scandinavia.

Yelp
As an American who has never had smørrebrød before, Aamanns 1921 was an amazing introduction to both the tradition and a more modern approach to a classic Danish food. The server spoke both Danish and English and was happy to help me navigate the menu. She was great at explaining 2-3 smørrebrød is typically enough for one person and was very attentive during my lunch. She also recommended trying their house made schnapps which they have a wide selection. I tried an herbal one that would complement the plaice well but I think my expectations of American schnapps (grossly sweet) got in the way of enjoying the reality (strong more like flavored aquavit). Best thing in the menu: Tomato Smørrebrød - it was the right level of freshness and earthiness due to the rye bread. The seasoning also accentuated the quality of the ingredients present for a surprisingly filling and satisfying plate. Ambiance - More fine dining with white linen tables and a classy but quite packed dining room. There were both single rectangular tables and some round tables for much bigger parties. Most people were dressed well in tailored wool coats and more business casual wear.

Yelp
The most amazing tasting menu for our group! I couldn't have asked for a better experience. Our serve was incredibly kind and explained each dish.

Yelp
Stopped by for lunch at an outside table on a beautiful day. Service was top notch and very friendly. Ordered the lunch menu with the three smorresborG option smoked salmon, chicken salad and fried fish. Sandwiches were huge, almost twice the side of Aamanns Deli and the flavors were good. Personally I enjoyed the flavors at aamanns deli a bit more and the price was 1/3 less. Restaurant was beautiful and didn't require a reservation for lunch. I would return but as I said I would recommend aamanns Deli a bit more.

Yelp
Aamaans 1921serves danish food in an elegant, modern space. Diners have the choice of a 10 course menu, 3-course menu or a la carte. We opted for the 3-course menu. Our first course was freshly baked sourdough bread followed by our appetizer, slow cooked potato topped with potato foam and grilled monkfish finished with rich lobster soup. The dish was nourishing and warming for my sleep-deprived soul and balanced tart, creaminess and meatiness effortlessly. The main course was grilled pork two ways, the first preparation, a grilled pork belly topped with brown sugar sauce, and the second preparation being a pork meatball topped with onion and parsley and served with a side of spinach and lingonberry salad. Dessert was a dish with rhubarb, almond cake, ice cream and marscapone cream and topped with cardamom crisps. Aamaans serves a delicious tasting meal and is an elegant backdrop for a swanky date

Yelp
Great food - I'm not usually a huge fan of herring, but the Herring Plate was incredible along with everything else. Don't miss.

Yelp
I really wanted to love this place. And I did, on some aspects: the interior is stunningly beautiful and tasteful, and it is located in a central yet slightly less high-traffic area of Copenhagen, within walking distance to all the main attractions. That said, the food and service have some "opportunities for growth". Food: First, PSA. My view on the flavor combinations here is heavily influenced by my cultural background. Some of the ingredients were staples from childhood, and there was no shyness in my grandma's pickled herring and dishes that it involved. At Aamanns, the food presentation was absolutely gorgeous and definitely matched the "elevated smørrebrød" brief. As for the flavors: to me, a little bit of a juxtaposition of salty/sour was missing in the herring smørrebrød, and the young potato one could use a bit more of the zesty elements to balance off the sweetness of all of the layered carbs. Service: The place was quite empty when our group showed up but filled up soon after. And it was clear that the kitchen and the front of the house were struggling a bit with the number of guests. Overall, it was a pleasant experience but for smørrebrød next time I'll go to the Torvehallerne (great selection from several vendors, quick service, and you can wander around afterwards).

Yelp
For our last night of our Copenhagen trip, my husband and I decided to go big at a Michelin star restaurant and chose this. The restaurant is so beautiful and intimate. We got the 3-course meal and enjoyed every part of it, from the appetizer to dessert. They've truly mastered the balance of creativity, beauty, and taste with their menu. I'm sure they update their menu seasonally so I don't think it's as useful to share specifically what I had when I visited in Sept. 2022, but definitely give the 3-course menu a try to get a variety of what they have to offer. Even the portions were perfectly filling and we left feeling very satisfied.

Yelp
Fantastic service - my server Sonia kindly guided me through the menu and recommended stellar dishes. Absolutely delicious food and paired fabulously with housemade snaps. Wonderful!

Yelp
Perfect location. In between the shopping and historical areas of Copenhagen. No reservations, no problem. We lucked out and grabbed seats at the bar. The pumpkin smorrebrod was a pleasant surprise. Savory and delicious! The dry-aged beef tartare was great too, but I think I made a misstep with the butter fried breaded plaice. Good, but the flavors were familiar when I was looking to try new things. We ended the meal with a risalamande, just the right thing to enjoy during the holiday season. The smorrebrods were a feast for our tastebuds, but the eyes as well. Definitely worth taking a pic.

Yelp
A culinary Gem and one of Copenghan's best: Aamann's 1921 is a contemporary take on traditional smorgasbords. Located in the heart of Indre By, expect very friendly staff in a pretty and modern setting. Come here for lunch (a fantastic deal) make reservations, and sample the smorgasbords. Staff recommended two dishes: marinated herring and tomato-eaten in that order. If you want a taste of Denmark, get the herring: a Danish classic. This dish surprised me the most in a very pleasant way. The herring was marinated in elderberry for more than 3 months within a wooden barrel and the result was nothing short of extraordinary. The sweetness imparted by the elderberry beautifully complimented the strong flavor of the fish. The tomato was outstanding: it was an explosion of flavors and textures ranging from acidity to sweetness, saltiness to a hint of spice, and textures that shifted from crunchy to soft. The lunch prices are extremely reasonable for the quality of food. I was so impressed I came back the day after for another round of delight. If you want to savor an essence of Danish cuisine, this is a must visit.

Yelp
We had two wonderful Meals here while visiting Copenhagen. The first one was for lunch or we had to try their fabulous smorrebrod . The selection was amazing and we ended up trying the new potatoes with the crème fraîche and micro greens along with the smoked salmon and dill and the chicken . Every single creation was a work of art and absolutely delicious. Did I mention that they make their own homemade schnapps here? The variety is incredible. Every type of herbal concoction and fresh fruit you can imagine is available. They are all very unique and are paired with your meals. And of course they also offer a fab selection of beer & wines. Our second visit on our last night in Copenhagen was for dinner. We were lucky to get a table right when they opened for a prix fixe 3 course vegetarian meal that was out of this world. I normally don't go for vegetarian but this was absolutely amazing. We started with the leeks, white asparagus and hazelnut paired with a geranium and gooseberry schnapps. Next up was hummus with seedy thin crust crackers. By the way the bread and butter also were amazing! Next Was incredible oyster mushrooms paired with a smoky plum schnapps they were so meaty and delicious! Then we enjoyed a tender salad with horseradish and radishes. This Was followed by new potatoes and green onion. The dessert was a rhubarb cream toasted quinoa paired with a rhubarb schnapps. Emily and Kaspar were our amazing servers and this meal along with the fabulous lunch we shared on another day made for a wonderful remembrance of this beautiful city.

Yelp
I came for dinner at aamanns, and I was a few minutes early for my reservation but they seated me immediately. The waitstaff if very knowledgeable and attentive. I ordered the smorrebrød and schnapps pairing. The actual meal was good, but the schnapps were fairly questionable (maybe im not a schnapps person?). I think the other meals there may be more worth the price, but the actual smorrebrød meal was a little underwhelming considering their takeaway option is cheaper and just as good.

Yelp
Seeing all the hype about this place, especially the open sandwich, we decided to give it a try while staying in Copenhagen for four days. Yet this resto, in my opinion, is another grand failure thanks to all the hype. I don't want to waste my time commenting on every dish, but in general they mixed all the unnecessary ingredients trying so hard to impress, while at the same time ignoring the fact that sometimes less is more. The perfect example for this is their beef tartare - the beef itself was so good but the fact that they put toffee sauce (?) and roasted daikon (?) made no sense to me because the flavor did not harmonize. Anyways, overall rating 2/10 - over-priced with mediocre food and service.

Yelp
When in Denmark, you must have a traditional smørrebrød lunch. With several locations in Copenhagen, Adam Aamann is the king of Smørrebrøds with his elevation of the traditional Danish open-face sandwich with its unique taste and texture. Aamann uses fresh local vegetable toppings and signature Danish presentation to provide his diners with something more than just an open-face sandwich. I am not a big fan of herring, but the smoked marinated herring smørrebrød with a fried egg was absolutely a delicious both in taste and texture with each mouthful. Each one of the smørrebrøds on the menu are well crafted and beautifully presented and worth every penny! When in Copenhagen, treat yourself at Aamans 1921.

Yelp
"We only now set the tables so you have to wait till 2:30. Sorry we don't have anything for 4." While I see an empty 6 top right over there.

Yelp
I called the number on their website (+45-20805204) at 18:50 to check if walk-ins are accepted for the night for a party of two. At this point, I can still make a reservation on their website for the same day for 20:00, 20:30, and 21:00. I thought we are going to get there before these times so wanted to call to confirm. On the phone, I was enthusiastically told by a woman that it's totally fine. However, once we got there at 19:40, the waiter at the front desk looked at us as if we were crazy for not making a reservation. I explained that I called to confirm and he said he does not know what I'm talking about. I know for sure that I could have made a reservation even at 18:50, so the waiter must be turning us away for whatever weird problem he has. Either way, the restaurant is confusing and extremely unprofessional.

We managed to sneak in a reservation just before the second Danish COVID-19 lockdown and we were not disappointed. We were a party of four and ordered the 10-course evening menu, different lemonades and a very good chardonay whose name I canot remember. The menu was inspired by the traditional danish dishes but presented in really pretty portions for sharing family-style. I am also all about the ambience; the place has an open plan, squarish, with tables close to each other but still providing the intimacy for each table. The staff is wonderful and the food is great.

Yelp
The most fabulous Copenhagen spot chosen by my friends who live there. No tourists here, just locals who know great food. They are known for their chef made schnaps... drink the new ones available. Trust me on this ... do the Rye Bread schnaps ... it is warm & rounded & goes so well with all the food. Eat what they recommend ... it is a foodie scene.

Yelp
It doesn't get much better then this place. The food, drinks, service, atmosphere.... it couldn't have been better. I think this was the best complete experience I've ever had at a restaurant and I like to think I get around It's like danish tapas but the serving sizes are generous. 6 dishes between the two of us and we left stuffed!! Go here!

Yelp
Because we were there during restaurant week, we were lucky to have a table in the first place . Overall I was happy with the portions and the flavors . I do want to return to try their regular menu. Everything was well seasoned and delicious!

Yelp
State of the art type of smorrebrod, expected of the Copenhagen food scene. We chose the set lunch menu to get a diverse sample of all the smorrebrod. The staff is really friendly and offers to take a picture of us 'tourists'. Overall I've enjoyed all of toppings. Even my mom who doesn't usually doesn't eat raw meat enjoyed the taretare. Whether or not you like it really depends on how you enjoy 'innovative' cuisine (textures, surprising flavours etc.). Stylish interior design.

Yelp
Rude front desk waiter and poor reservation system. Service was intolerable and food was overhyped. Simply avoid. There are way better smørrebrød elsewhere.

Yelp
Incredible experience - wonderful food, wonderful service. Went for lunch, got 5 course set menu; every bite was just wonderful. Definitely on short list to go again, highly recommend.
