Bar Tartare - Review - Gastown - Vancouver - The Infatuation

"Bar Tartare has the romantic glow and gravitational pull of a European wine bar, complete with an overflow of people on the cobblestone street patio, knowledgeable servers, and a cooler well-stocked with natural wine. Who’s cooking what in the kitchen changes weekly, but a tight menu means that, with the right company, you can knock it all off in a night or two and in time for the remix. On any given week you could have mussels verde with chorizo in beer broth, or maple blossom and squash fritti, or even an “anything goes italian burger" with a beef and egg yolk filled raviolo patty. Besides Tartare’s shapeshifting menu, its rotating selection of coveted BC wines from the likes of Ursa Major, Poppyshake, and A Sunday in August will keep drawing you back in. Get there early to stake out a table, fill it up with food, and clock the remaining hours of the summer night by the glass." - Thalia Stopa

17 Best Bars in Vancouver, From Tiki Bars to Supper Clubs | Condé Nast Traveler

"I consider Bar Tartare a leader in Vancouver’s natural-wine movement, occupying Birds & the Beets by night and shifting the room into a darker, intimate space with exposed brick and colorful orb lighting. The ever-changing list of natural wines sources bottles from BC and abroad, staff offer cheeky samples before pouring, and a summer patio with picnic-table seating plus rotating chef pop-ups means no two visits are ever the same." - Sara Harowitz

The 38 Best Restaurants in Vancouver, Canada | Eater

"After the much-loved Juice Bar shuttered, long-time server Lindsay Otto took over and re-opened the place as Bar Tartare. Located in the same space as the popular Birds and the Beets cafe, the bar stocks its fridges with unfined, unfiltered, natural, and low-intervention wines from B.C. and beyond. Expect knowledgeable servers to cheerily exclaim “Try this!” as they pop corks (or unscrew caps). Given the bar’s name, you’ll have to try the tartare (the bison is superb, with plenty of zingy flavor and crunchy textures), but check out nightly specials from the rotating crew of guest chefs. Best for: Exciting pop-ups with some of the city’s most talented young chefs." - Nikki Bayley

First time trying this place — loved the patio! The area wasn’t too busy, super cozy even though it was a bit windy. The staff were really friendly! The chef rotates, and we got the ceviche — it was okay, but the vibe totally made up for it. Would definitely come back to try more food! Overall 9/10 🤍

Great experience here - the chef our night had a great menu, and the wine selection was perfect for the meal. Definitely a spot worth trying out in the city, and it is a very reasonable walk from downtown hotels

Cute bar and good wine selection with seasonal pairings. Had lovely outdoor seating though inside can be stuffy. A bit pricey but worth the experience!

If you enjoy unique food with thoughtful wine pairings look no further than Bar Tartare! My good friend and I wondered over for dinner (part 2) after a recommendation from another local restaurant we had just come from, and it became our favorite restaurant on our Vancouver trip. We shared the scallop crudo and tempura oyster mushrooms (both were awesome) and a bottle of Reflexion. They all complimented each other perfectly. We loved the bottle of wine so much that we picked up another two days later to enjoy back at our Airbnb. Shout out to Wallace (part of their staff) who helped us choose - she is so knowledgeable about their wine offerings - don’t hesitate to ask her for a recommendation. Thank you Bar Tartare 💜

The melon crudo was a standout the compressed cantaloupe with jalapeño, basil, coriander oil, and fennel pollen was so fresh and unique. The radish tonnato with peanut chili crunch and basil was equally delicious, layered with flavor and texture. The wine pairing was excellent and really brought everything together. Highly recommend!

Phenomenal dinner from this week's chef Christian. Highlights were the lamb croquette and the pork and spot prawn dumplings. Great wine pairing recommendations from the waitress. I could likely eat several slices of the apple custard cake we had for dessert...it reminded me of something I'd get at a high end bakery. Do recommend making a reservation. Would strongly recommend dining here and we will definitely be back. Some of the better food I've had in town. 3 glasses of wine each and every food item on the menu split between 3 of us was ~$70cad each.

Bar Tartare is by far my favourite wine bar in the city. The staff are so well educated and knowledgeable about their products and I love the rotating chefs. They really bring together Vancouver's best! I got married here over a year ago, and I cannot say enough good things about the team and the space. They were so accommodating, and really went above and beyond for us. Vibes, wine, people and food all very much on point :)

It was a misty Friday in Vancouver. Reunited with an old friend, we were in the mood to celebrate and to Dear Gus we went. Only to discover that there was not a natural wine in sight 😳 We didn't panic. I calmy pulled out my trusty cellular device and ordered a private car to Bar Tartare. We danced while we waited and within a flash we arrived into the red light cellar that is Bar Tartare 🥩 Our hearts in staccato as we pulled the glass doors ajar, we feared the Friday evening rush was at its peak. A charming host stated the obvious, they were full and suggested we come back at ten...with a wink. He put us at ease. We returned promptly and were seated at a cozy table. The rest is history. Plentiful bottles open by the glass. OG natural wine international champions. Up and coming BC producers with hybrid varietals. Delicious tuna tostada and other Mexican inspired plates from their latest rotating chef. We ate. We drank. We lived. Thank you bar tartare for a night to remember 😘

Yelp
Ive been to Bar Tartare also when it was Juice bar and loved it both times. I've always sat out on their outdoor patio and it's a great spot to split a bottle of wine and have some good eats with friends. Their staff are friendly and walk you through the varied wine options (lots of unique choices). The pasta we got was with their rotating chef from Le Mano and it was great.
