"Bros' is a synonym for a young, free spirit which is full of creativity and imagination: Floriano Pellegrino and Isabella Potì make the most of their extraordinary energy on two tasting menus that range from 20 to 25 small courses (note that the restaurant no longer offers an à la carte) which can be “tracked” in advance through a QR code. Their cuisine features innovative and surprising tasting dishes – many of which are finished with a theatrical flourish at your table – all the way through to the excellent desserts. To a background of modern music, guests are guided on a no-holds-barred journey through the personal gastronomic world of two exciting chefs. An interesting wine list which includes a selection of organic and biodynamic labels, and excellent service complete the picture." - Michelin Inspector

Theme Restaurants Are Making a Major Comeback | Bon Appétit

"An Italian restaurant in Lecce noted in this context for previously serving an alternate version of the ‘Uni Kiss’ presentation — uni delivered from a ceramic plate molded like a mouth — cited as a precursor to a similarly theatrical dish elsewhere." - ByAdam Reiner

What Is an NFT, and Why Are Chefs and Restaurants Getting Into Them? | Eater

"A Michelin-starred restaurant in Lecce drew viral attention after a critic lambasted a theatrical dish—a plaster mold of the chef’s mouth filled with edible foam—and an image of that dish circulated widely online; the owners subsequently announced plans to sell that now-iconic image as an NFT. The chef called the NFT opportunity a way to monetize the publicity, but commentators questioned the point of authenticating a widely shared image and suggested the move may be more of a PR play than a substantive artistic or commercial necessity." - Adam Reiner

Chef Pens Three-Page Letter Defending Right to Serve Foam in Mouth Vessel | Eater

"A one-Michelin-starred restaurant in Lecce, Italy, run by chefs Floriano Pellegrino and Isabella Potì became the focus of a viral review that described a four-plus-hour, 27-course tasting in which the reviewer said “there was nothing even close to an actual meal.” Reported items included edible paper, glasses of vinegar, rancid ricotta and a plaster mold of the chef’s mouth filled with a citrus “limoniamo” foam that guests were told to lick out. Pellegrino answered with a lengthy, three-page declaration defending avant‑garde cuisine as art, arguing that mastery of technique lets chefs break rules and framing his experimentation as revolutionary—a defense that echoes ideas associated with Ferran Adrià and Picasso. Critics countered that, unlike visual art, food must remain eatable and questioned whether provocative presentation justifies the dining discomfort; the exchange ended on a notably passive‑aggressive note when the chef thanked—and mocked—the reviewer while claiming they were “out of stock of ‘Limoniamo.’”" - Madeleine Davies

Worst Michelin Meals: Mouth-Shaped Plates and Tongue-Shaped Entrees | Eater

"A one-Michelin-starred Lecce restaurant serving an experimental, marathon tasting menu reportedly spanning 27 courses over nearly five hours, with many dishes described as tiny, often cold, and more like appetizers. Reviewers reported confusing ingredient choices and explanations (phrases like “rancid ricotta” and “we’ve infused these droplets with meat molecules” were mentioned but not clarified), inconsistent allergy handling—one guest received nothing for three courses while another had an allergic reaction after being served something they couldn't eat—and extremely small main courses (the largest course was said to be six noodles). The meal includes a controversial theatrical course in which citrus foam is presented inside a plaster cast of the chef’s mouth and diners are instructed to lick it out of the mold; that same plaster-cast mouth is sold in the restaurant’s gift shop." - Jaya Saxena

Surprising dishes, some of the early starters taste super intense - do not expect standard Michelin fare and you will not be disappointed! Definitely memorable.

This was an amazing experience! If you're into asian food and italian food and lots of surprises - this is the place you need to visit! Everything is so modern, not like the usual Michelin star restaurants, which makes it, in my opinion, an unique experience. I do not drink alcohol and have some serious allergies but they offer you a delicious homemade kombucha and take really care of your allergies. It was not the typical long 4 hour sitting (we chose 17 courses), the courses came quick and there were many surprises from the start 'till the end - it's perfectly timed and organised. The staff was very friendly and did an amzing job! I wish I could tell more about this but I do not spoil ;) You have to do it - this is something, where you leave the restaurant with a smile :) - Thank you all for the amazing experience, best regards from the girl who spilled her olive oil over her white dress :)

Google
Great Michelin star quality restaurant! Unlike a few other reviews of this place mine is very positive. The 15 course tasting menu took about 5 hours, but this was time well spent. It was a rollercoaster of tastes and experiences. The dishes were partitioned in two, arguably three, groups (sour and umami) but had a common factor: the use of fermented products. Almost every course had some fermented ingredient which caused special and surprising tastes. Highlights of the meal were the quail and the razor clams. Both made to perfection. These guys clearly got a great deal of experience from the three star Martin Berasatgui in San Sebastian but here they created their own beautiful unique culinary experience. The staff was very friendly and personal to give a friendly and welcoming feeling. If you have the time to go here, definitely do!

Google
Great experience that takes us to other tastes that we do not usually eat or combine together. with a whimsical mention for the dish “GLASSWORT, SPIRULINA, EGG” an unmissable passage if passing through Lecce, and for those who like to discover new tastes! congratulations you did not deserve your michelin star 👏👏👏👏

Google
Fantastic meal and the perfect setting to try an exciting take on local flavors! Bros stands out from the other “southern comfort” meals we had and was worth the trip to Lecce for a michellin quality meal. Service was outstanding with great wine pairing suggestions. Definitely go for the 5 or 15 course menu!

Very original and unique cuisine. The chef is high talented, especially in molecular techniques. You'll try a lot of "new" preparations. The whole team is really passionate and preparated.

One of the most unique and fun dining experiences I’ve had. The service was incredible as well. The wine tasting dialed up the experience to 11.
