Portland Pizza Icon Sarah Minnick Talks ‘Chef’s Table,’ Dough, and What it Means to Cook Seasonally | Eater Portland

"I rely on flours from Camas Country Mill—our dough blends five different Camas flours made from Oregon-grown grains—and because those flours are not standardized the hydration and handling change with each batch, so we have to roll with variability when fine-tuning crust and dough." - Brooke Jackson-Glidden

How Camas Country Mill Became Portland’s Grain and Flour Rockstar | Eater Portland

"Operated by Tom and Sue Hunton out of Eugene, this small, family-run stone mill revived a grist mill in the region and supplies prized, stone-milled flours made from hard-to-find grains (including Edison wheat, hard white and hard red spring, teff, rye, einkorn, red fife, and more) to top bakeries, pizzerias, restaurants, schools, and food banks; I learned that the mill hand-packs flour, runs with 14 employees, drives weekly deliveries up to Portland, funds humanitarian work through commercial sales, hosts farm field trips for kids, and remains motivated by community trust rather than culinary prestige." - Brooke Jackson-Glidden

Is Portland America’s Best Pizza City? | Eater Portland

"I note Camas Country Mill, based south of Portland, supplies flours that are ubiquitous across the city’s pizzerias and help fuel the local focus on non-white and regionally milled flours." - Brooke Jackson-Glidden

I LOVE Camas Country Mill! I've been buying a variety of flours from them for my sourdough bread for years. I recently moved from Portland to Utah and they're still the only place I buy from. I cannot recommend their products highly enough - if you like baking bread you should absolutely try their Edison hard white wheat. Easily my favorite flour of all time, it makes a very extensible dough with a uniquely soft texture and buttery scent. Their classic bread blend is incredible too; complex, earthy, and very flavorful (it's a mix of hard red, hard white, and spelt). Their shipping is always super fast too! Every time I order they seem to ship first thing the next morning, I'm always impressed with the speed. Give them a try! I'm a customer for life and have loved everything I've gotten from them.

I stopped by for some bread after a recommendation and ended up having the best lunch! Their Loaded Baked Potato Soup came with cheese and chives and was absolutely delicious. This included a very soft slice of bread and butter. Their Molasses Ginger cookie came highly recommended and it was my favorite. I will visit this beautiful bakery again and again!

Camas Country Mill is a Pacific Northwest gem! Their flours are grown with close-to-home ethics and milled w technical expertise, not to mention a team that makes you feel like part of the family. We’re lucky to have their flours, and the schoolhouse and bakery are always a fantastic experience:)

This place is absolutely amazing. The food, cinnamon rolls, breads, cookies, are absolutely delicious. Their breads are the best I've ever had. They grow and mill all of their wheat, grains, flours ect. they are as good as it gets. They have an old school house from like the 20's that's really cool and fun to see. To top it all off, the owner Sue is super sweet and fun to talk to. Must see and worth the drive to the other side of the airport!
