Casa Manco is THE BEST PIZZA in Rome, and I've tried many! One of the most amazing features of their pizza is the crust. The dough has a long fermentation period (like 100 hours) and the flavor is extraordinary! They sell pieces of the crust covered with sesame seeds and for so simple a combination it's truly delicious. Then, to top their wonderful crust they select the finest, freshest organic ingredients, often from vendors in the Testaccio Market where they are located. My favorite is the squash flowers with stracciatella and anchovies. But they have many to choose from and they change from day to day depending on the availability of ingredients. Some pizzas, like the Casa Manco pizza, is always available because it's so popular. You can see from the photos that the toppings are not only varied and delicious, but also carefully and beautifully arranged so every slice gives you the full flavor each variation can deliver. Believe me when I say "this is THE place to go in Rome for pizza"! Finally, I must also mention the wonderful people who make and serve the pizza. They will explain each pizza and what it has and serve it to you with a heartfelt smile. They are often very busy at lunch so be prepared to take a number and wait a bit. Best to go either before or after the lunch rush, especially if you are in a hurry.
