Spring Cocktails to Sip Right Now in D.C. | Eater DC

"The dreamy bar above chef Matt Baker’s Michelin-starred Gravitas is the spot to sample seasonal gin flights served with accoutrements, ice, and choice of Fever Tree club soda or tonic ($32). Or opt for one of bar director Judy Elahi’s snazzy new cocktails like the “Spring Blossom” ($22) made with J. Rieger Kansas City gin, Berto dry vermouth, Chateau De Breuil VSOP Calvados, lime, mint, rose water, and Aquafaba. Check out Gravitas’s cocktail menu here and Conservatory’s here." - Kalina Newman

The 11 Best Rooftop Bars in Washington, D.C. for Summer Views | Condé Nast Traveler

"In a building that was once a tomato packing warehouse, Gravitas is a Michelin-starred tasting menu restaurant from chef-owner Matt Baker, and upstairs is his rooftop bar Conservatory looking out over Ivy City. The creative cocktail list is gin- and absinthe-focused, with options that tend toward the fresh or the smoky. On the food side, you can go a la carte (as opposed to the tasting menu downstairs) but the food is still quite fancy: think caviar service, escargot toast with whipped brie, Wagyu beef tartare, and crispy confit duck leg. Even fried chicken gets a black truffle honey glaze." - Adele Chapin

The Conservatory Rooftop Bar Will Bring Ivy City Cocktails and Tartines - Eater DC

"Gravitas chef Matt Baker is introducing a rooftop cocktail bar called The Conservatory, featuring a tight menu of raw seafood, charcuterie, cheeses, and tartines. The venue includes a bar inside a glass enclosure and a small, uncovered area planted in a garden to supply produce to the kitchen. The raw bar offers oysters, crudos, and caviar, and tartines come topped with items like roasted potatoes, marinated goat cheese, or seafood from Ivy City Smokehouse." - Gabe Hiatt

Quality and taste wise amazing! The lamb could’ve been bigger portions but the chicken schnitzel was ample portions. The drinks were delicious. Would be interested in coming back for the chefs tasting menu. The bartender Mike Ross was super friendly and a delight to talk to! Gave it a 4 because I felt the drinks could’ve been stronger for the price and the lamb portions could’ve been bigger. The shrimp appetizer was also a bit too salty. The rooftop was a vibe for sure. Looked beautiful once the sun started setting!

I’ve been anchored at the Galt House for about 6 weeks. When I need food fast, I go here. When I need a drink, I go here. The atmosphere is fantastic as a “sky bridge” between both towers. Can’t recommend this spot enough.

Completely incongruent atmosphere, service and vibe of the Gravitas restaurant right below. While the tasting menu was slightly different and appealing, the service was horrendous. The bar was covered in used glasses waiting for their turn to be ignored by the fill-in bartender who was coincidentally ignoring the patrons who were also waiting to be ignored. The rooftop venue is being used as a chair and table storage facility peppered with dead foliage and some burnt out string lights. The greenhouse is neat.

We had the most amazing experience. I strongly recommend the rooftop! The drinks were phenomenal and the food was exquisite. We will definitely be back!

Service and ambiance 4/5 Ate at the winter chalet which is on rooftop. Was drafty. Food 3/5. Good food but not great value or portion size.

Yelp
This Michelin-starred establishment truly lives up to its reputation. Our bartender, Mike, was exceptional. After sharing our preferences, we trusted him to craft a cocktail, and he surpassed all expectations. Following his recommendation, I indulged in the chorizo-crusted scallops, which were simply exquisite--light, flavorful, buttery, and flawless. We concluded our meal with an Italian digestive, capping off an unforgettable experience. The ambience is very sophisticated.

Yelp
The bartender was EXTREMELY nice. The food was okay. It is a bit pricey and somewhat upscale. It was just okay. I would go again because of the bartender.

Yelp
drinks were very good. got the cheese assortment to start and it was delicious (the fig jam was my favorite thing from the night). whole fried branzino to split (a nice large fish!). maybe the fish wasn't allowed to drain after frying, but the dish ended up collecting a pool of oil in the bottom which made everything a bit too oily. for the price it is average value and flavor. also rooftop is super loud because there is the kitchen's exhaust coming out right next to it. multiple tables are right by that exhaust and several parties asked to be moved farther away because you can't really hear anyone speak.

Yelp
Great restaurant, food and cocktails were superb. I don't even really like gin but the bartender was able to convert me. It's also a good covid friendly space on the roof, they've got heaters and a partially enclosed area in case the wind is whipping about. Definitely a higher end sort of place but good value for sure.
