"This fully vegan restaurant at Resorts World Las Vegas serves all manner of seasonally-changing pizza, house-made pasta, salad, and dessert. Chef Tal Ronnen, who co-created the Kite Hill brand of vegan dips and spreads, incorporates vegan alternatives to butter and cheeses in each dish. Some popular eats from the winter menu are a poached pear and feta appetizer, wedge salad with vegan blue cheese dressing and chunks, spaghetti carbonara with a runny “egg” that really runs, and eggplant short rib served with mashed potatoes and mushrooms. Dessert includes pineapple baked Alaska and a brownie sundae. If you are having a hard time deciding, visitors can experience a seven-course tasting menu for $175 or five courses for $75, with optional wine pairing for both." - Katie Swalm

"Whether you’re vegan, with somebody who says seriously that they’re flexitarian, or just want to enjoy a meatless meal, Crossroads Kitchen is the place to go for fine dining that just so happens to be plant-based. The dining room feels a bit like a music industry executive’s formal dining room (think lots of dark wood and rock ’n’ roll photography on the walls). Start with the famous Impossible Cigars, a Moroccan-style egg roll made of savory vegan meat wrapped in a flaky, crispy wrapper that’s served with an almond yogurt sauce and presented in a wooden cigar box. The restaurant recently expanded its hours (and menu) to include lunch and weekend brunch, but you should really come here for dinner before catching one of Resort World Theater’s headliners." - Emmy Kasten
