The brisket at Edge Craft was absolutely fantastic. Some of the best fatty cuts of brisket I've enjoyed in quite some time. Edge Craft managed to walk that fine line of tender and flavorful (which is hard it seems, based on other BBQ places in town). The bark was beautiful. The ribs were also delightful. I ended up eating both of those meats (as leftovers) the next day and they were still quite tasty.
But there were definitely a few misses. The sausage is... fine? Spicy, but no real flavor beyond that, and really coarse in grind. So coarse that some of us got a mouthful of cartilage that didn't get broken down.
About the sides: the Mac & Cheese was good and my favorite of the bunch. But every other side seemed to have a vinegar base. So regardless of what we ordered, we ended up tasting just vinegar:
- Smoked Elote? That's a vinegar base.
- Coleslaw? That's an apple cider vinegar base.
- Baked Beans? Ooh, you better believe that's a paddlin'. I mean vinegar base.
The vinegar undercurrent in many of the sides was so overpowering that I wasn't sure if I was imagining that even the Potato Salad seemed to have a sour pickled quality to it. Vinegar, vinegar, vinegar, vinegar, vinegarvinegarvinegarvinegar. As the meal finished, I absolutely hated the Coleslaw; ended up throwing away a lot of it. The Elote was also pretty unpleasant by the end as well. Also, the sauces are forgettable.
The wait time was long, and will likely influence future visits, because it's not a quick thing when you wanna enjoy some BBQ. Much like many other BBQ places, Edge Craft won't take call-in orders. So you have to show up at like... 11 am or whatever, and then stand in line for some ridiculous amount of time, even if you want to take it to go.
Also, I was overcharged like... $6. Which, isn't a tiny amount, but the receipt machine gorked out right when it was printing, and I said it was fine. But after looking at my credit card statement, I'm like... that's not fine. But no proof now. I'd like to think it was an accident, but I'll be paying more attention in the future, because the person at the register is watching what's being put on your tray as you order (I'm pretty sure the sides for the meat plates were rung up separately), so unless you're also doing the math in your head, you're kinda just trusting the process.
Two 1 meat plates (with two sides each), 1 lb of brisket, 1/2 lb of spare ribs, 2 house sausages, and 3 additional serving portions of sides came to like $89 (after tax and tip). Pricing is reasonable for BBQ (when they charge accurately anyway).

We were back within a couple weeks of our first visit and:
We didn't have to wait in line at all the second time, which was surprising. Also, the prices had already gone up. Brisket went from $12 to $13 for 1/2 lb, and the Ribs also went from $8 to $9 for 1/2 lb. Actually, I think all the meat prices went up. Which is fine really because the prices last month were kinda low for a BBQ joint in OKC, and are now in line with most of the other OKC BBQ restaurants. But where the prices went up, the food quality went down. So double-whammy of dissatisfaction.
The ribs the second time around were awful; not seasoned particularly well, and the texture of the meat was what one would expect from ribs that were cooked too quickly (tough, stringy, hard to pull off the bone) than low and slow-cooked ribs. And the brisket; I asked for fatty, just like last time, but where the first brisket experience was meaty, juicy, and flavorful, this second 1/2 lb of brisket was just... blubber... Fatty in every sense, with none of the rich flavor. The Mac & Cheese is still good, but overall, this was a crap experience. So between a [*][*][*][*] first experience and a [*][*] second experience, this place is kinda just sitting in the middle now, and I'm not in a rush to go back.
