At restaurant Forchetta, Chef Max introduces the first Mediterranean-Taiwanese cuisine, boasting the island’s rich organic produce and abundant seafood.
I would describe the menu that I tried as creativity with the comfort of familiarity brought by local ingredients. Chef Max cultivates his own garden of edible flowers and herbs, so each dish is infused with distinct aromas that surprise the senses.
Served omakase-style, the tasting menu adapts with the seasons, ensuring each visit offers something new—making it a magnet destination for regulars.
