"True to its name, Gomtang Lab is dedicated to studying gomtang (beef bone soup) and developing diverse new recipes. Chef Yim Jung-sik has relentlessly pursued this culinary journey since the days when he helmed Pyeonghwaok. His signature dish is collagen beef bone soup, made by simmering beef leg bones, tendons, feet and oxtail for more than 10 hours until thick. Once you finish the bowl brimming with chewy, tender meat and savory broth that make a perfect meal, you’ll find your lips sticky with gelatinous collagen. To cater to different tastes, the menu offers several variations of gomtang, including a clear, meat-only version and a spicy version with added beef tripe. Delicious! There is quite a lot of beef in the soup, the soup is great with a bit of pepper. It is actually the first meal I find enjoyable when I came to Seoul. You can serve kimchi by yourself, I don’t feel sorry as I don’t eat them a lot.

Best gomtang I ever had. I typically find comtang a little bland however their signature version was thick, simmering with sweetness of various beef cuts stewed for hours. It had oxtail, beef slices and various innards. The beef and pork mandu was not bad with extremely thin skin however I will not specially order this again.

They serve pretty traditional rice with soup and they do a decent job. The gomtang was hot, flavourful, and had tons of meat or collagen, depending on the soup that you chose. The kimchi was okay, but the radish kimchi missed the mark for me. It didn’t taste seasoned because the flavour was a bit hollow. The servers were friendly enough and the food came very quickly. Overall, it’s a decent place to grab gomtang on a rainy/chilly day - but they didn’t really stand out in any way compared to others.
