"Some time before “street food” became a Thing in London, Bill Oglethorpe set up a cheese toastie and raclette stall at Borough Market. At first, that was an occasional table outside Neal’s Yard Dairy, where he worked as a cheesemonger and from where he sourced his cheese — notably the crucial combination of punchy Montgomery’s cheddar and Ogleshield, which is a British raclette-like oozy cheese named after him. Later Kappacasein morphed into an always-busy trolley in the Market, and more recently a permanent stall at the top of Stoney Street. In 2005, the esteemed American food writer Ruth Riechl described Bill’s sandwich as ‘the Platonic ideal of toasted cheese’; and it remains towards the top of London’s on the go pantheon. "To chemists, kappa casein is a milk protein. To cheese enthusiasts, it’s a certain London-based mini cheese empire run by Bill Oglethorpe. The dairy, located in the producer haven that is Spa Terminus, is famed for Ogleshield cheese that Bill, formerly master affineur at Neal’s Yard Dairy, makes with unpasteurised full-fat milk. His Borough Market stall has been in operation since 2000 and is known for two £6 superdishes — firstly, cheese toasties that the editor of Gourmet Magazine once labelled “the platonic ideal of grilled cheese,” made with grilled Poilâne sourdough, four types of onions, and a blend of raclette, Montgomery cheddar, Ogleshield and Comte cheeses. Secondly, oozing raclette, liberally scraped onto Charlotte potatoes and topped with cornichons and pickled onions. Makers of raw milk cheese since 15 odd years at Borough Market. Cheeses made with raw milk in London. I heard about Kappacasein Dairy through a friend, and well it is a must try cheese shop in Borough market. As expected it did had a queue, and wait time can sometime go upto 15-20 mins, for us fortunately it was only 5 mins, but the staff was unexpectedly fast to make and serve quickly. It has only two things in menu- RACLETTE & TOASTIE - trust me I have never had such an amazing cheese toast ever earlier.

I thought it was really good! The little touches in the mix of cheese create a beautiful harmony of flavors. If only the bread had been white bread… that would’ve made it perfect.

I have already wanted to leave Borough market, but noticed the queue and the smell when passing by and decided to share a plate. Ogleshield 📍Place: it's right at the corner of Borough market, naturally serving mainly for takeaway, but also has some standing tables around. There are two separate queues for their only 2 dishes they serve. 🍛 Food: it's a raclettte place, so that's in the centre of both products. You can have the very simple but intense tasting boiled potatoes with melted cheese (Ogleshield) on the the top with pickles on the side OR the toastie made with sourdough bread, onion, leek and many different kind of cheese. 👩🏻‍🍳 Service: ⚠️You can only pay by card! The queue could be long, and it's not going fast (which is obvious from the nature of the raclette cheese), so you need to be patient. The most amazing part is that we have been served by the owner, Mr. Oglethorpe, he was super nice and talkative - it turned out that the Ogleshield cheese was named after him 😳 Amazing place I would definitely recommend 😊

Phil Rosenthal once said this is the best toastie in the world and I 100% agree! It looks so simple but packs a flavor in the way that each toastie is toasted to perfection with the melted cheese. Only disappointment was that I wanted to go again on Sunday for breakfast before flying back home but they're only open Thursday to Saturday :( (hopefully there's a next time)

How can just a sandwich be that delicious? Each bite is an explosion of cheesy flavor. This wasn't my main meal, I had already eaten something before, but I really wanted to try it and it was the best decision! I was so full but I couldn't stop eating!

I had heard so much about Kappacasein Dairy’s legendary toast, so I finally decided to give it a try. As expected, there was a queue outside, and we waited around 10-15 minutes. The menu is simple, offering just two items: their famous cheese toast and raclette cheese melted over potatoes, served with pickles on the side. The place itself is small, and the food might seem basic at first glance, but the quality of the ingredients truly stands out—it’s something you can taste with every bite. I had heard some comments about the toast being too heavy on onions, but we didn’t find it overwhelming at all and really enjoyed it. If you appreciate well-made, quality food, this spot is definitely worth the wait!

I saw this on Somebody Feed Phil on Netflix, man… Phil never lets us down. This cheese toastie was wonderfully comforting and rich. The cheese was sharp and crisp and the added leeks and onions were an uplifting element to what would be such a simple yet classic sandwich. Hands down my favorite grilled cheese sandwich ever. My only feedback would be that I wish the servers were more mindful of how many surfaces they touch while making the sandwiches. It was icky watching the server fix her hair consistently and then proceed to touch our sandwiches and then proceed to taking payments…. Pretty much a constant habit from all of them behind the counter touching their clothes, aprons etc while making the food…otherwise this would be a 5 star place, but hygiene matters especially in the food industry.
