My New Life Goal Is to Make Motzi Bread My Local Bakery | Bon Appétit

"When I go to Baltimore, my parents think I’m there to visit them (and their cats), but I’m actually in town for the baked goods from Motzi Bread. In addition to drop-in business, Motzi offers online ordering for pick-up on Thursdays and Sundays. To the great joy of my family, I’ve made it a point to place an order whenever I’m in town. We’ve tried the hearty people’s loaf (good for slicing and sandwiches); the generously-sized English muffins; the delightfully sour classic; the millet raisin, which has more raisins—and plump ones, too!—than any raisin bread I’ve ever encountered; the earthy, seed-spackled benne rye (my personal favorite); and the almost molasses-y chocolate chip cookies, which are brimming with single-origin, bean-to-bar Askinosie chocolate. I have yet to meet a Motzi Bread baked good I won’t devour—and because they frequently add new items to the menu (like end-of-summer focaccia with peaches and rosemary, apple challah for Rosh Hashanah, and cardamom buns), I’m always finding something new to try. The owners, Russell Trimmer and Maya Muñoz, live directly above the space, where they mill their own flour from grains sourced from farms in the Chesapeake Bay region, like Migrash Farm and Next Step Produce. Even their pastries and sweets—which are as rich and buttery as pastries and sweets should be—are naturally-leavened and 100 percent whole-grain, meaning that they’re also incredibly flavorful. (My mother-in-law and I spent more time than was reasonable naming all of the tasting notes in the chocolate chip cookies. Is that...treacle? Espresso? Wheat germ?) Even more important than the delicious bread is Trimmer and Muñoz’s commitment to their neighborhood, the Harwood section of Charles Village—it’s a cornerstone of their business rather than an afterthought. “We feel very responsible to Baltimore, for what it’s given us but also for its history of white supremacy, including red-lining and divestment from schools. It’s our responsibility to do what we can for the place we’re in,” they told me. Rather than expansion, “our focus is on what the neighborhood is looking for in a bakery.” Their pay-what-you-can policy means that no one is turned away, and the $5 “pay-it-forward” option on the ordering form allows customers to purchase a loaf for someone in need. If I lived in Baltimore, I would eagerly join their weekly subscription service, which allows Motzi to build lasting relationships with their customers while ensuring a baseline revenue to help keep their small business stable. Subscriptions are currently sold out, but when they’re back in stock, I’ll be signing up my parents immediately. Bread for them—and more visits for me." - BySarah Jampel

Yelp
Motzi is a wonderfully passionate bakery devoted to whole grains. We mostly buy their breads at the nearby 32 st farmers market. These are dense, wetter breads than most Sourdough but that makes for better shelf life and better freezing. The English muffins are incredible and last week's in the freezer. Warm them, split them and then toast is what we do. Plus they are super nice people.

Yelp
Great bread! I've had their sourdough at Artifact Coffee and Le Comptoir Du Vin and it's one of the few slices of bread that doesn't irritate my stomach (I'm gluten intolerant). I realized that their online ordering was actually quite easy and their pick up hours were a bit more accessible than I remember them being. I ordered my sourdough loaf online a few days in advance for a Thursday pick up. I stopped in around 3pm and the loaf was quickly wrapped up for me. I asked if it could be sliced like the white bread loaf can but I was informed that the classic sourdough loaf is too large to fit in the slicer. I also love the fact that they offer a pay what you can program and a pay it forward option. And judging by their fundraising for important causes, this is a business I will continue to support. For $7, I thought it was a great deal for such a large and beautiful loaf. It froze and reheated very well too so none of it went bad. I wish I could try more of the menu but I should probably play it safe. If you're gluten intolerant and tend to be able to tolerate sourdough, I definitely recommend giving their classic loaf a try.

Yelp
Great bread! I'm a baker myself and their loaf bread is stellar! Focaccia is okay. Croissants are okay. Can't give 5 stars because not the same quality across all bread products, but I am definitely going to be a regular customer for their loaf bread! Hearty but soft texture, very good.

Yelp
The English muffins are out of this world. Come here for those alone. Their classic loaf is quite good; nice and wheaty. Pastries that we have had so far have been tasty as well. The "pay what you want" model is interesting and I wonder how many people actually ask to pay something different from what is suggested. Staff are always super friendly and there's a decent chance that what you take home came out of the oven just seconds before. They are quickly becoming my go-to source for quality bread in Baltimore.

Yelp
The cookies, the bread, just everything from this place!!! I cannot make a reuben or other grilled/toast based meal unless it is from their sesame sourdough rye bread... omg it is so good. Their cookies are amazing and worth getting there early to make sure you get some. I love all of their products, just try it and see if you feel the same. : )

Yelp
Today, my brother introduced me to Mitzi's. I will say from the start bread and the chocolate chip cookies were from Heaven. But more importantly, when you walk through the door, if you don't feel love for Bakery, love for people, love for the neighborhood, and love for humanity, you missed it. That place is nice just to visit. But the bread I got was the best bread I ever had. oh, and the chocolate chip cookies were divine.

Yelp
Hands down one of the best bakeries that I've ever visited. I've driven by many times, seeing lines out the door, but it was only recently that I finally made it there. They have a variety of items that the shop changes up which makes every visit a new experience. The owners are super friendly and always willing to educate me on all of their products.

Yelp
Located in the Harwood section in Charles Village, Motzi Bread is my new favorite bakery in Baltimore. Ever since Hoehn's Bakery (https://www.yelp.com/biz/hoehns-bakery-baltimore?sort_by=date_desc) unexpected and sadly closed in September of this year, every time I'm in the area, I make sure to stop by this unassuming shop for some of the BEST baked goods around. We bought a bunch of different items, including a loaf of their challah bread, a few pain au chocolats, and a piping hot savory tomato and herb focaccia. Everything was fantastic. The pan au chocolat had a flaky but not dry texture and the filling was a high quality semi-sweet chocolate. But that tomato and herb focaccia - dang, that was tasty! Super fresh heirloom cherry tomatoes were split, topped with herbs, salt, and a light coating of oil, and then baked to perfection. Even with a load of toppings, the focaccia bread was not soggy. Challah bread was used for breakfast the next day when I was hosting family for brunch, and was enjoyed toasted with a bit of butter, cut and used for a few slices of French toast, and also torn and used to sop up sunny side up eggs. Owners Russell Trimmer and Maya Munoz live directly above the space and I love supporting places like Motzi Bread, especially when you read about their business philosophy and practices: https://www.motzibread.com/about. I also highly admire Motzi Bread's "pay what you can" policy, since this means no patrons get turned away which benefits those members of the community who might be impacted by food insecurity.

Yelp
I really wanted to like this bakery. I support their mission and I had heard their bread was great. Unfortunately the bread had been underproofed (it was completely flat), underbaked and burned at the same time (it was gummy in the middle) and it tasted flavorless. It was not the quality I would expect from a bakery, more like from a friend who had just started learning how to make bread.

Yelp
I hardly leave reviews but everywhere I travel I stop by at least two or three local bakeries and always try a chocolate chip cookie. After probably six years of chocolate chip cookie stops across the eastern and west U.S, Motzi's ccc takes the number one spot! It was delicious--the chocolate was melted, the outer edges crispy yet light, subtle salty in the sweet buttery batter bites. Motzi is definitely a must-try!! If I was local, I'd be here all the time. Lucky Charles Village folks have a gem!

Yelp
Motzi Bread is a lovely, local, bakery offering delectable brown-bread loaves to complement your meals all week long. On the day the bread is baked, its hearty outer crust belies the soft, spongy, even sticky interior. It's amazing dunked in hot soup, spread generously with peanut butter and honey, or even just eaten on its own. While Motzi Bread recently opened a bakery, the grand opening has been stymied by the advent of COVID-19, and so instead they are offering an online ordering system through their website, which can then be picked up from their front porch "Bread Library" directly above the bakery (how cute!). There is a strictly one person on the porch at a time policy, and they have wisely double bagged all breads so you can discard the outer bag when reaching home. Forget the 6 foot distancing rule because I have observed baker Russell staying about double that distance away from passersby as he takes the responsibility of food safety very seriously. It is appreciated Russell! Unsurprisingly, given that example, Maya and Russell, the bakers and owners, are both fabulously kind people, and deserve our every support. They have baking cred, too - Russell formerly led the bread team at Woodberry Kitchen! So far we have tried their baguette (delicious), the rye (tasty), the sesame (yum) and the classic (my favorite!!). Not only is their bread amazing but they also have a social mission, providing frequent donation loaves to local charities, and providing discounts to those who need them. Now there's a cause (and loaf) worth embracing with open arms!

Yelp
The folks running the shop were so nice and sweet and the challah was awesome. Will be coming back soon!

Yelp
Best croissant I've ever tasted, and I spent two weeks in Paris. The focaccia was to die for, and the baguette was over the top. The ethical standards they uphold in both sourcing ingredients and selling are the highest. Even the cocoa, coffee and chai were all delicious. I look forward to sampling the entire menu. Run, don't walk to Motzi Bread.

Yelp
When my wife and I had discovered this gem three blocks away from our house, we decided to do a little more research. After discovering that Motzi has a subscription service, we gave it a trial run with a 3-month subscription back in April, and have since re-upped for a 6-month subscription. The subscription is very flexible; you're basically allotted credits for the time you purchased. You can select one product a week, save your credits, and even donate your products to charity. What is even more awesome is that Motzi has a pay-what-you-can system. Although we pay the suggested price, we love to see the willingness to be flexible in how someone pays. We have tried various products from Motzi, our favorite is the Benny, which is their sesame rye. We usually try to get it sliced, unless they made it really fresh, which they tend to do, but either way, it is so good for that charcuterie board. Another favorite is the family loaf, which can be sliced, and we use it for sandwiches. Another favorite is the blueberry muffins in which they may look small, but they are perfect. The blueberries are plump and not overly sweet. The shop originally did web-based orders only but had opened up to same-day orders within the last couple of weeks. But be prepared to wait in a line as the neighborhood has come out in full support and the shop only allows one household at a time. The shop has played host to a political candidate in recent weeks, allowing the candidate to set up shop right next to the store. They even named a bread after the candidate with part of the proceeds going to the candidate.

Yelp
We have been subscribers for awhile (since before the storefront opened) and it has been so great to see the shop grow and evolve. The bread is unique and delicious - our favorite is the benne heirloom sesame but we also love the rye 5 ways. Our kids love getting a treat there - usually the chocolate chip cookies or hot cocoa. I can also highly recommend the haldi doodh (golden milk) and chai which have great flavors and aren't too sweet. Motzi has great sourcing practices, great presence in the community, and great customer service. Plus everything is pay what you can! I also recommend their seasonal specialties like the holiday cookie box and rotating focaccias. The line can get a bit long but it moves quickly. Just allow a few minutes to pick up your items and enjoy chatting with the other folks who are waiting as well. I've met some great people in line at Motzi

Yelp
We stopped by Motzi Bread a weekend or two ago, and it was wonderful. It's to go only - you walk inside just to order and pay and take your lovely goods to go. They're a very classic bakery - lots of loaves of bread! We tried an everything baguette, English muffins, and a cardamom bun. Everything was delicious. The English muffins are something I haven't seen that often on a bakery menu, and they were a particular treat (I'm used to those store-bought, stored in the freezer, and then defrosted and toasted English muffins). They were a few minutes out from having an everything baguette ready and they brought it out to us piping hot straight from the oven which was amazing. The service was great. The menu is great. The business has great principles (such a local and community focus + pay as you wish model), which makes me want to support them even more. It was a great visit to this amazing local bakery. We'll definitely be back (especially as we can walk - is there anything like walking home with a hot, fresh pastry?)!

Yelp
Motzi bread is the absolute best bakery in town! In addition to being delicious, the owners are true stewards of the local community. We are especially grateful because we have a child with multiple food allergies and it can be hard to find a bakery that is safe--since we found out it's safe, we've made a stop at Motzi a part of our weekly routine!

Emily K.

Yelp
I'm new to Baltimore and I'm so glad I discovered this gem! Highly recommend to stock up on some yummy baked goods!

Allie W.

Yelp
A wonderful bakery run by wonderful people. I felt so welcome my first time visiting the bakery after reeving numerous recommendations to try their bread. Definitely the best baguette I've ever had, and it's amazing that it is made from freshly, milled whole grains--you can taste the difference!!!

Yelp
What a treat! Motzi Bread is a delightful little bakery offering a a lovely selection of breads and pastries crafted of the finest ingredients. The owners seem to truly love their work and serving their community. I was touched by their warmth, kindness, and their "pay what you can" policy making high-quality baked goods accessible to everyone in the neighborhood.

Yelp
Newly arrived on these shores I was given a Motzi loaf as a housewarming gift and I am converted. Their English muffins are amazing and so is their (vegan) chocolate chip cookie. They are at the 32nd St farmer's market every other week, and you can also order online to guarantee your items are in stock at the shop.

David G.

Yelp
Motzi bread is an essential element of my diet and I am so grateful for their contribution to our community.

Yelp
Baltimore has bread! Loving this neighborhood bakery that is putting out creative, comfort baked goods. Each week I look forward to new creations and the good old standards made with the best, earthen ingredients. Don't miss the chocolate chip cookies - OMG.

Yelp
First let me echo the eloquent sentiments expressed by my fellow YELP member Ben J. MOTZI Bread is truly a one of a kind rare find in the heart of Baltimore! Over the last few years it has been both a joy and a privilege to witness first hand Maya & Russell's amazing journey to bring the dream of a neighborhood bakery to fruition. They truly do exemplify the quintessential creative, generous and hard working bakers of times gone by! As a life long "bread fanatic" I have tasted many a delicious loaf but none can compare to the amazing, dare I say addicting, baked goods offered at MOTZI Bread! I encourage everyone to visit this culinary gem for a loaf of delectable comfort food that will surely ease the woes of this " new normal" world! (* Maya & Russell ask that one contacts the bakery for current hours & availability)

Yelp
Their bread is so good, we almost always buy two loaves! This week we had my wife's favorite, the benne rye. You've gotta try the benne rye! Delicious! And I get excited anytime I see a babka on the menu. Russel and Maya make great breads, and they do great work for our community.

Yelp
Reasons to like this place: 1) Pay as you wish business model (although I pay the suggested price, which is definitely steep-$8 for a small boule loaf!, I appreciate the charitable mindset in a business); 2) Wholesome nutritious bread Not so great: 1) They were a little brusque, and while not rude, I wouldn't have minded a little more "neighborhood bakery" friendliness or even a smile; 2) Pain au chocolat did not hit the spot at all. They were flaky enough, but seem to use whole wheat flour for their pastry dough, so it tasted a little burnt/bitter, and there wasn't the decadent buttery smell and satisfying mouthfeel I'm craving when I order this. 3) I don't know if their oven runs too hot or something, but almost everything appears burnt/too dark, and also tastes a little burnt.

Yelp
I am so grateful to have Motzi Bread in my life! I am sensitive to most wheat products and their bread is the only bread I can eat without feeling sick; I believe because they mill their grains in house. Beyond that fact, their bread is increadible. It is seriously the best bread I have ever had in my life. Their People's Loaf is the perfect sandwich bread, with a crisp, flavorful crust, moist but firm and cohesive interior, and amazing chew. Don't even get me started on their cookies. After a particularly rough few days where I missed their COVID-19 social distancing pick up, Maya and Russel went above and beyond to make sure I got my loaves! Motzi is the real deal; a delicious, healthy bakery run by two people who really care about their community. I highly, highly recommend!

Yelp
Lovely bread bakery that intentionally sources their ingredients locally, and with fair trade in mind. i absolutely love their danishes, and their baguettes are great for a afternoon bocadillo, or for some winter time soup dunking. the owners generosity to their neighborhood is palpable, and makes you want to help pay it forward. . you wont meet any other bakery like it !

Yelp
Amazing. Try the Benne, the everything baguette, the focaccia - all so so delicious. We're subscribers now and working our way thru the menu. The raisin bread is also lovely - tangy and sour, great with a good butter. And the savory danish. Only down side is the calories.
