But every Thursday, he descends into the restaurant’s basement lounge for Night Goat, the city’s best craft barbecue pop-up. There are plans to take Night Goat’s barbecue into a brick-and-mortar honky tonk, but for now, you can only find it once a week at this underground basement, serving experimental dishes unlike any other Kansas City barbecue. The short and sweet menu rotates constantly, but it’s all great. We get equally excited about the pork belly burnt ends that come on pork fat tortillas as we do about jalapeño cheddar sausages with a spicy pickle mix. " - anne cruz

Their limited menu constantly changes, and no matter what, they always find ways to serve BBQ that’s different from other spots around town. Just take the pork belly burnt ends that come on pork fat tortillas or jalapeño cheddar sausage with a spicy pickle mix. They have three sauces to choose from, and we prefer their mustard and pickled jalapeño sauce over their slightly less flavorful BBQ sauce.
