"Siblings Matthew and Amanda Payan converted their family’s construction business warehouse in North Las Vegas into a production brewery and tasting room in late 2021. North 5th is truly a family operation as the owners are joined by the brewers who are brothers, Patrick and Sam Tofte. "Originally revealed back in 2018, the first craft beer brewery to debut in North Las Vegas is North 5th Brewing Co., which will operate out of 60 Mayflower Ave., five miles north of downtown in an industrial neighborhood near Fifth Street. Owned by Amanda Payan and her brother, Matt, the brewery's new head brewer, Patrick Tofte, previously held the same position at Fremont Street’s very popular Banger Brewing. Initial plans call for a 10-barrel brewing system producing about 1,000 barrels a year inside a 7,439-square-foot building, plus a 1,100-square-foot brew pub with room for roughly 85 customers and a small store selling branded goods and apparel. Planned features include a tasting room, a retail store selling branded goods and apparel, and the ability for customers to fill “growlers” to go or get “crowlers,” cans filled and sealed on site. The brewery is planned around a 10-barrel brewing system aimed at producing about 1,000 barrels a year, with a 1,100-square-foot brew pub seating roughly 85 guests. Brewing would occur during the work week and the tasting room would open afterward, with estimated hours of 4 to 11 p.m. on weekdays and 11 a.m. to midnight on weekends. The project—located five miles north of downtown—still must appear before the North Las Vegas Planning Commission, with neighborhood parking cited as a concern; the closest existing craft-beer rival mentioned is Banger Brewing on Fremont Street.
