All the 2025 Mexico MICHELIN Bib Gourmands

"The dishes are as distinctive as the decor, with an eclectic blend of shareable plates infused with plenty of personality. This is cooking that's free of boundaries; a menu where empanadas sit side-by-side with shrimp dumplings and fried chicken. Order a slew of items (don't worry—the plates are small) and find yourself surprised by how simple yet sensational they are (the tostada brings this point home). A brioche bun tucked with crispy oysters is a good follow-up, but it's the textbook-perfect flan that will have you returning before long. There's certainly nothing ordinary about Pink Rambo. This unique spot in Santa María la Ribera proudly shares their irreverence, and just in case you're questioning their quirk, take a look at that buff Jesus doing a pull-up on the large crucifix hanging over the kitchen." - The MICHELIN Guide US Editorial Team

The 38 Best Restaurants in Mexico City | Eater

"The Santa María la Ribera neighborhood is home to a number of trendy spots, including “psychedelic cantina” Pink Rambo, a lively drinking spot tucked behind a garage door. Customers gather at the bar and communal tables in a bright, concrete-walled interior patio to share dishes by chef Nicolás López and drinks by Luca Simpson-Damiano. Food items — lamb tartare, trout confit, fried chicken — are on the small side, allowing visitors to concentrate on the strong personalities of the cocktails, like the Kendall (gin, fennel, lacto-fermented cucumber, white wine) or Miriam (tequila, mezcal, radish, watermelon, sake). Best for: Lunch and cocktails with friends or a pre-game for a weekend night out." - Natalia de la Rosa

The Hit List: New Mexico City Restaurants To Try Right Now

"Pink Rambo is controlled chaos, in the best way, so come here when you’re looking to ramp up before a night out. The space with double-high ceilings and a retractable roof has R&B music playing and people using outdoor voices. Their menu is all over the place, as if someone took their favorite dishes from around the world and put them into one spot. There are langoustine dumplings in a homey broth and empanadas de queso con cebolla caramelizada with spicy garlic salsa. The wine list is eclectic, too, with everything from an Argentine cabernet sauvignon to Alsatian Pierre Frick orange gewürztraminer. Even though portions are on the small side, the prices are pretty fair, and service is attentive. " - guillaume guevara

I might be underwhelmed because, reading up on the place, I might have gotten swept up in the hype. The food was good, not "make want to come back again" good, but enjoyable. The chicken was perfectly cooked, the waygu empanadas amazing. You can go ahead and pass on the melon with goat cheese, it's literally melon slices with shaved goat cheese on top. No flavor, no texture, completely non descript. The staff is helpful, the crowd is cool with a kind of neo-hipster vibe. I enjoyed my visit, it was fun, but probably just a one-off.

Good stuff. Great vibes. A creative menu, reinvented by the chef every week based on the best local produce he finds, and cooked by him in front of you in the open kitchen. We loved the non alcoholic drinks (salted lemon, also ginger), and the signature dessert flan. The bread is also fantastic. The evening we went, our favorite specials were baby corn with oyster mayo, and mussels with hollandaise and potato chips (!). Go with an open mind. Think about visiting a friend who's cooking for you. We weren't disappointed with the food and had a great time. Also super happy to support young, local, seasonal, fresh, creative cuisine.

We made a reservation for dinner, but when we arrived, the restaurant had no power. The entire place was in the dark, lit only by a few small candles, with no music or any effort to create a pleasant atmosphere. It felt like we were eating in a blackout, which was incredibly off-putting. To make matters worse, no one bothered to apologize or even acknowledge the situation. There was zero effort to make it right, like offering a simple complimentary dessert or any kind of gesture of goodwill. We were a group of five who came from different parts of the city, all excited for a nice meal, but instead, we had an uncomfortable and unpleasant experience. The lack of professionalism and customer care here is unacceptable, and we will definitely not be returning.

Amazing food, each dish is an artistic creation, the drinks are excellent, the price is very reasonable. The chairs are a bit uncomfortable, but otherwise nice location. Neighborhood is not where you would normally go to, but you should definitely check it out.

The Pink Rambo is not to be missed. Drinks are fire and the langostino roll is incredible! Staff and atmosphere is so lovely. Make sure to get the flan!!!
