Last weekend was our first time here, and am happy to say, we will absolutely be back soon! We signed up for the high altitude baking class, and decided to arrive early to check out the coffee and breakfast menu.
I had the Giada - which comes with crispy smoky pancetta, egg soufflé, pecorino spread, and tomato butter on sourdough focaccia. It was, hands down, one of the best breakfast sandwiches I have ever had. The egg soufflé texture was delightful, the pecorino spread and tomato butter made it dynamically savory. I liked the tomato butter so much, that I made my own the next morning, to put on my cacio Pepe croissant (yum). The cold brew was particularly delicious as well.
On to the class - it wasn't a class that we baked in, but a class that we learned a lot in, as far as how to adjust different recipes for high altitude. The chef that led the class was wonderful - she led us through at a reasonable pace, showed us some common mishaps that happen when you don't adjust for high altitude (spread, rise then caving of cakes), and how to ensure this doesn't happen. Her enthusiasm was infectious. The room where class happened (photos included) was nice and bright, with plenty of space for everyone. We are coming back for holiday cookie baking - and I couldn't be more excited for it!
