Rebel Bread

We thoroughly enjoyed our time at the focaccia making class! We were greeted by Izzy, who is just delightful! Jan is a friendly, patient and thorough instructor. He was assisted by a lovely young woman (her name escapes me (sorry)), who made sure we had everything we needed, gave pointers and answered procedural questions. The class was well-paced and just enough hands on activity. It was fun to get to taste our work at the end...loved having the meats and cheese to make a sandwich with our creation! Also, we were excited to get to take a batch of dough to bake at home.

I knew Rebel was amazing as I have waited on line at City Park Farmer's market for their bread and pastries longer than I care to admit, but the classes are even better! Zach and Jan taught us the art and science of lamination, yes, croissants and pain chocolat and... So much fun!

My husband and I took the pasta+gossip class Tuesday, 1/6/26. It was such a wonderful experience, I couldn't wait to leave a review. Zach was an incredible host with a funny icebreaker at the beginning; and he also shared travel and cooking memories of his life. We learned how to make various types of pasta, Apple herb ricotta filling for the pasta, brown butter, and Pasta e Fagioli. The pace of the class was perfect. There is a camera on the ceiling pointed down at what he is doing and projecting the steps onto 2 large monitors on either side for the class to see. There were 4 people per table, enough for 16 people. Zach visited each table multiple times throughout the class for additional pointers and recommendations. Zach showed us how to mix the eggs and flour to make the dough, knead the dough, roll and cut the pasta, then fill it and create at least 4 different types of pasta. I was pleasantly surprised that you do not have to be a chef to take this class (I actually hate cooking, and loved this class!!!). While we were making the pasta, they were boiling it to serve to us with candied speck pork, olive oil and freshly grated cheese. My husband asked how to make ravioli, which wasn't on the agenda. Zach showed him and our table practiced several rounds of this. He even packaged up leftovers for tomorrow and advised how to store and cook. By the end of the class, the pasta e fagioli was cooked to perfection which we then enjoyed in the cafe, along with wine and cookies. Not just any cookies, but delicious cookies the size of your hand cookies (sourdough chocolate chip and pistachio/chocolate chip). Delicious!!! All around, we were thoroughly impressed with how well organized the class was, Zach's knowledge, friendliness and professionalism; not to mention the stellar facility, staff and class. Lastly, socializing and meeting new people was an added plus! 5 stars to Zach, Rebel Bread, his assistant (Jahn?) and the rest of the staff that make this place shine. We will be back for the sourdough bread, tortillas and dog treats classes! Not to mention the cookies, pastries, bread, sandwiches and anything else we have yet to try! Can't wait. Thank you so much for a stellar evening!!! There is plenty of parking in the lot in front of the bakery.

Ive been going to Rebel Bread consistently for the past year for their sourdough loafs, and they recently moved their cafe to another part of their building! They have such a cozy cafe space that completely blew me away. Tons of seating, super efficient, and the best quality pastries and bread. Their customer service is always top tier too! Their paninis are also extremely unique and some of the best you will find. If you're looking for amazing croissants, sourdough, muffins, and scones to go with some delicious coffee and a cozy quiet environment, DEFINITELY check them out!!

We had THE BEST TIME at the pasta and gossip workshop!!! This was so much fun …we can’t stop talking about it!! We laughed…we ate…we kneaded…..it was better than “Katz’s” !!! (You foodies will get that). We started with some amazing pizza before the workshop. Then during the event, our homemade pasta was amazing and the soup, bread and cannoli are to die for! Great event for bday’s, a fun girls’ night out (wine is available) or just an activity for something new to try out. Zach the owner is amazing, talented and super entertaining! Our table mates were adorable and made our night a blast! I mean to gush sorry!!We are going to the next workshop for sure and please consider opening a rebel bread in Colorado Springs!

Awesome place, delicious menu, friendly staff! They host fun events like a pizza party every Friday night and baking classes. I can't wait to try all of the menu items! They offer wholesale ordering too.

There’s a lot more to Rebel Bread than tasty breads and pastries. We took Jan’s pretzel shaping class for a date night and loved it. Jan is a great instructor and the rest of the staff are awesome. The class was perfectly balanced for all skill levels, while being educational and “hands-on” so you feel part of the process. Obviously the pretzels tasted incredible, and the vibes were on point. It also happened to be pizza night, so we grabbed one To Go after class. Brilliant. Do it.

Rebel Bread started as a mostly wholesale operation with a small retail counter that sold out very quickly after opening each day. They have now expanded into the adjacent storefronts and have greatly increased the scope of their retail business. There's now a much bigger bakery, a lovely café with seating for about 20, a beautiful teaching kitchen, a full coffee bar, and a large selection of breads and pastries which is kept stocked throughout the day. We tried a chocolate croissant, a tiramisu croissant knot, a raspberry cream cheese croissant square, a double chocolate sourdough muffin, and a sourdough chocolate chip cookie. All were unusual, creative, and delicious. There were lots of other choices in the case. We were so enthralled with the pastries that we didn't pay attention to the actual bread selections, but there are many sourdough-based options. There's plenty of staff, all very friendly and helpful. The café menu includes nine sandwiches, a couple of salads, and a few sides, plus coffee, tea, beer, and wine. There's also Friday Night Pizza from 5pm to 9pm with ten toppings to choose from, salad, and dessert plus a bar with beer, wine, and cocktails. An extensive menu of classes, from all sorts of baking topics (including dog biscuits!) to pasta and sourdough is available. The teaching kitchen is brand-new, spacious, well-lighted, and well-equipped. A hidden treasure has become even better. You should definitely check this out!

Last weekend was our first time here, and am happy to say, we will absolutely be back soon! We signed up for the high altitude baking class, and decided to arrive early to check out the coffee and breakfast menu. I had the Giada - which comes with crispy smoky pancetta, egg soufflé, pecorino spread, and tomato butter on sourdough focaccia. It was, hands down, one of the best breakfast sandwiches I have ever had. The egg soufflé texture was delightful, the pecorino spread and tomato butter made it dynamically savory. I liked the tomato butter so much, that I made my own the next morning, to put on my cacio Pepe croissant (yum). The cold brew was particularly delicious as well. On to the class - it wasn't a class that we baked in, but a class that we learned a lot in, as far as how to adjust different recipes for high altitude. The chef that led the class was wonderful - she led us through at a reasonable pace, showed us some common mishaps that happen when you don't adjust for high altitude (spread, rise then caving of cakes), and how to ensure this doesn't happen. Her enthusiasm was infectious. The room where class happened (photos included) was nice and bright, with plenty of space for everyone. We are coming back for holiday cookie baking - and I couldn't be more excited for it! See you in December!

We just had the most incredible experience at Rebel Bread - their bakery tasting and tour with owner Zach was absolutely fantastic! Hearing Zach share the story of Rebel Bread's journey and the passion behind each creation was genuinely fascinating. He and his team truly bring the bread to life. This experience happens in an active kitchen. We sampled so many incredible things, it felt like a complete meal. The pastries were out of this world (not an all-inclusive list of what we tried): - The Family Style Bagel was a total game-changer. - The morning bun and cinnamon roll were pure, warm comfort. - The K-Pop Croissant was a unique and delicious savory surprise. - The Everything Bagel Puff - Zach said people either loved it or hated it, and we definitely fell into the 'loved it' camp. - The Tiramisu Croissant Knot is a dream come true for any tiramisu fan. - And the Blueberry Almond Croissant was hands-down our absolute favorite! And we can't forget the amazing breads! We tasted their classic Rebel Sourdough and Heritage Sourdough, plus a dill bread that instantly became my favorite, one with olives, a seeded variety, and many more. Every single thing was fresh, and creative. They really harp on giving their bakers creative freedom. If you're searching for a unique Denver experience or simply want to dive deep into some of the most amazing baked goods around, you absolutely have to book the bakery tasting and tour. You won't regret it - in fact, I am already planning to do it again! Pro Tip: If you're interested in trying Rebel Bread but live further away, check their website. They sell wholesale to many bakeries across the Denver Metro area, so you might find their delicious creations closer to home.

This place is so wonderful and they recently built out a beautiful counter and space. We stopped by for croissants, but now we want to try a class as well as the pizza.

Rebel Bread now offers pizza on Fridays from 5pm-9pm. They offer 3 bases and 10 toppings. The 14in pies are thin crust with 8 slices. There are 2 salads & 2 desserts. You can get sparkling waters, Italian & Botanical soda, Novel Strand Beers, 4 wines and cocktails featuring Uncle Tim's premix. All at reasonable prices. I ordered the marinara base with Hot Calabrese Salami, Altius Farms Blue Oysters mushrooms and red onion. I added a Wheat Berry salad and a glass of Uncle Tim's Old Fashioned premixed cocktail. The freshly prepared salad came out first. Good amount of cooked wheat berries. The pizza arrived shortly. Nice toppings and crust. The staff was friendly. When I arrived most of the dining was full. I saw quite a few takeout orders. They have large windows where you see people taking classes and look into their 5 kitchens. The cutlery is black metal utensils and stoneware plates. Very nice environment. Plenty of free parking out front.

The storefront is a bit hard to find, but it's definitely worth the search! Located in the design district on South Broadway, Rebel Bread has a big selection of fresh bread and pastries. I tried the morning bun and blueberry almond croissant. Both were awesome and not too sweet! I am a big fan of almond croissants, and this was a very good one. There is also a basic drip coffee option to go with your morning treats!

I thought my sandwich was innovative and delicious. Also bought the pesto bread and it was so good. This place is a working bakery. I love it. Cute place to eat. Service was pleasant.

So delicious every time! I found rebel bread originally at the Pearl St Farmer's Market and love coming to their Broadway store front as I'm able to order from their full inventory. Also, watch for their seasonal bread options which are super creative and not flavors you'll see everywhere. Although sometimes it can get busy on the weekends, the line always moves fast. The store front itself is in a small mall off Broadway close to I25, so if you're not looking for it you'll miss it. I usually come on weekends and it's a great alternative to waiting in the long lines they have at the local farmer's market. Prices for loaves of bread range from $8-10 and pastries under $6. I think I'll stop by again soon to grab the Challah sandwich bread and keep trying more pastries!

Came here around 10am on a Thursday morning. It's a small place, nondescript, right off Broadway. There wasn't a line but they had already sold out of several loafs. I was in the market for pastries this day but definitely want to return for a loaf, they looked fresh and there were many options. Staff were super friendly and insightful about each option, the cashier recommended four options and I ended up trying all. All four were great (see photos). They also run almost daily bakery tours and baking classes (one was happening this morning) which I would want to come back to do. I would 100% return here and highly recommend. Denver has several great bakeries and this gives them a run for their money.

Sour dough cookies were delicious. Tiramisù Croissant Knot was disappointing. Where was the mascarpone cream filling?

My wife thought I was crazy when I brought her to this nondescript bakery in an industrial kind of strip mall, tucked away from busy Broadway. But upon walking in there was the overwhelming smell of baked delights and a warm atmosphere. I can't remember the exact pastries we ordered one of each I think, but they were great.

I am ISO good sourdough bread and this was EXCELLENT!! I'm so glad I made the drive down Broadway! Customer service was excellent and the smells divine!! I will definitely be back!

We just discovered this place and we are obsessed! Sandwiches are 10/10, we've tried their bread and croissants and are addicted. One of our new favorite spots!

Rebel Bread-well, yes, it is a bakery. It is also a bread school. Rebel came to Denver just over 5 years ago. They had just gotten started making some of the most delicious bread and pastry around, then covid hit. Zach, the owner, managed to generate enough business to keep going utilizing a bread delivery system to mostly commercial accounts. Covid receded and business as usual got started. The retail counter is in the Denver Design Center at 675 S. Broadway. The Bread School is offered from time to time. When I attended the bread school, I had already begun my sourdough bread baking journey. Having an entire day with step by step, hands on experience, I escalated my skills immensely. Currently, I bake weekly using the recipe and skills I learned there. Tours of the bakery are also offered from time to time. For a small fee, you can sign up and have bread and pastry tastings. I cannot imagine that anyone would be disappointed in any product that is baked here.

bread bread & more bread. This was a great Yelp event that tought us about the history of Zach Martinucci and his local bakery. I'm definitely not an expert in making anything car related, but I learned a lot about the process or forming dough, the history of sourdough, and making the delicious croissant I had earlier during the day. The pastries were flaky, delicate, and tastes so good that you have to go get more. From learning the process of baking this delicacy, to actually eating it, it was a great time! Will definitely be back to get more pastries.

Can't say enough good things about the Yelp experience. I love bread and pastries so it was an easy sell to sign up and attend the tour. I love learning about baking and behind the scenes processes as I bake at home (not an expert like these folks but still a baker nonetheless). I love bread, wait already said that. The tour was really great to get so up close and personal with the bakers. They were able to answer questions and hearing about the history of Rebel Bakery was pretty fascinating. Makes you want to rethink your career and bake bread for life, wait just me? Loved getting a sampling before the tour, stopping in their shop to grab another pastry, and then getting to taste their sourdough. My favorite 100% hands down the nonna - I love anything with rosemary so it won me over. Salt, pepper, garlic, rosemary, sage, and olive oil - need I say more. Go get your bread on!

The only thing I am upset about is that I have worked down the street for years and never knew about them! The cinnamon roll croissant was to die for as was everything else we got for our team. I am a huge fan and will be back soon!

Great pastries! We got a free offer from our realtor and gobbled up the free pastries before our coffee was ready. I headed right back to the counter and got two more pastries. So delicious! A little tricky finding which building it was in, had to go over a bridge and look at the building map a few times. It's near the designated parking lot FYI. Parking can be annoying so that was extra handy.

The absolute best sour dough. We purchase it at our local grocery store. Locavor in North Denver. You have to get there early as it always sells out.

Great place ! Easy parking. Inside a business complex. Their bread is divined. Got the olive ciabatta and it's gonna be my favorite loaf ever! The focaccia is so airy! Pricing is reasonable. Would definitely come back and try other kinds of bread. Seriously their flavors are so appetizing I wanted them all. Highly recommend and would definitely revisit when I'm in the area.

This place has grown a lot over the past five years! The brioche and Nutella buns are delicious . They often run out of some types of bread as the day goes on, but that's just because it's so good!

Nona's bread was so delicious that it didn't last long, but the roasted garlic boule was the perfect accompaniment to my pasta and my tomato soup.

Tiniest bakery with a storefront open on limited days (looks like Thurs-Sun). I'd come back here often if I lived here. Really wanted to try the cacio e pepe croissant mentioned in other reviews, but it wasn't available when we stopped by. * Everything Bagel Puff w/ cream cheese: Why is this perfect?? The cream cheese was so soft. I'm in love. Why must I share pastries with anyone? * Tomato Butter Croissant: What a lovely flaky pastry. We dug into this one immediately - that's why my pictured croissant already has a bite in it. * Tiramisu Croissant Knot: Haven't had croissant knots too often but I liked how this was done. Almost like a reverse cupcake.

3.5 stars rounded up because the cacio e pepe croissant was tasty and unique. I got the cacio e pape croissant (as noted above, this one is a winner!) and the pain au chocolat. The latter was okay, but definitely needed more chocolate -- one small strip didn't cut it with a pastry of this size! The cashier was unfriendly and refused to engage even though I was the sole customer, which was a bummer. Heads-up that the shop is pretty tough to find. It's tucked into an office park and the outside of the building is unmarked excluding a small sign on the door.

Great coffee, great bread. My husband LOVES the herb-y and olive-y fougasse. I like the "Denver danish." The bread loaves and baguettes are where this place shines, in my opinion. As the name indicates, Rebel doesn't follow any strict baking conventions. They put their own twist on things and don't go on about "authenticity." I get the sense that they make bread and pastries that they like, and they hope you like it too. Try the brioche stuffed with nutella. You can thank me later.

I'm not sure if this was just a one-off, but I had possibly the worst pastry of my life here :( with such great ratings, I expected it to be great. But, I got an everything bagel pastry and the cream cheese tasted like curdled milk/sweet bananas. My girlfriend tried it and almost threw up from the offputting taste. I wanted to like this place so badly but it was genuinely so bad!

Was very tasty though slightly pricey. Cute hole in the wall. Appreciate the outdoor seating effort. Very friendly. Got the blackberry brioche bun and the Candied Speck + Cheese Bun. The cheese bun was very original. It seemed slightly over-baked but I couldn't tell if it was supposed to be that way.

Bread. Best 5 letter word. Rebel Bread is a go to whenever I go to the South Pearl Farmers market. There's usually a line formed around the corner for this stand, and that's how you know ITS SOOO WORTH IT!!! Last Sunday I tried the cacio e pepe croissant -- took it home and made a BEC (bacon egg and cheese) out of it. It was phenomenal!!!! They rotate their breads but overall have the standard bread choices like ciabatta, & sour dough. Honestly anything you get from Rebel Bread, you cannot go wrong.

They deserve these five stars for everything they do! Boosting small bakeries with bread club deliveries? 5 stars! First ever bake fest? 5 stars! Expanding to utilizing local grains? 5 stars!

My husband and I had the privilege of touring this bakery today and trying several of their delicious breads and pastries, and let me tell you, from a fellow baker and English teacher who is too excited to care about this run-on sentence, their work and customer service is exquisite! We got to meet the owner, Zach, and he shared quite a bit of his knowledge and passion with us. Their pastries are delicate, flaky, and delicious, and their breads are tender and tasty. I highly, highly recommend as this just became our top bakery in Denver.

Rebel is the best! I always get Rebel pastries at coffee shops around town and they never disappoint - some of the best in Denver. Their bread and pastries are both technically perfect and delicious. today I went straight to the source- the Rebel flagship on Broadway- and daaaaang. Person helping me was so friendly and informative and the "k-pop croissant" deserves a yelp page all of its own- laminated with nori and chili flakes, lightly topped with a sweet n spicy hot honey, garnished with a scallion (I know I'm missing some flavors here) was insane.

We happily found a weekend spot for grab-and-go baked goods. Our order of their 60/40 sourdough, lemon poppyseed scone, everything croissant, and almond bear claw was all very, very good. I think we all fell for the lemon scone - it was dense, flavorful, and far from the traditional dry kind. It was a perfectly quick and easy spot for repeat visits!

Let's just say the croissant didn't make it home. It was blissful - as big as my forearm and perfectly baked. Many, many, many layers of buttery, fluffy dough. I've been obsessing over their pastries for a while now, but my schedule did not align or I went to a location where they did not have goods anymore. Enter instagram! I found out that Rebel Bread has weekend hours at 675 S Broadway, Denver from 8 am to 12pm. I make the trip across town and got there at 8 am - told you i was a little enchanted with them. The lady was super attentive and awesome - she told me that the danish I was looking for is only made for Saturdays - I said: "I'll be seeing you again on Saturday!" I purchased 2 everything bagel muffins, chocolate croissant, a cinnamon sugar and cardamon rolled muffin, and a plain croissant. Good bread is hard to find and I am elated I finally visited Rebel Bread. There is coffee at the location! So, you'll be able to grab a cup along with the bread.

Sourdough loaves were delicious! I'll definitely be back for more and to try the sourdough pizza dough.

I visited rebel bread a few years ago, purchasing an odd looking cinnamon roll. Walked home a couple miles and ate. How could I have purchased only one? I recently visited again, buying two cinnamon rolls. So delicious and not the same as a few years prior. Should I have purchase and eaten 4? No harm in that. I may buy a loaf of bread next week. I relied on Great Harvest for several years, so my standard is high.

The best kept little secret. Use entrance for IntuEat for grab and go cafe. Everything is AMAZING! Baked fresh every day, such a good and unique variety. Cant recommend enough.

Awesome new bakery in Five Points / Curtis Park. Not a huge selection to choose from, but everything they offer is delicious and very fairly priced. The brioche pastries are outstanding; bagels are airy / not as heavy as a traditional bagel; and their sourdough hits the spot. To boot, the owner (Zach) is welcoming and extremely personable. I haven't tried their cooking classes but have heard positive things about them. Will be coming back

My favorite bakery in Denver! Stop in for a delicious treat, or better yet- have it delivered straight to your door. If you have a Denver address, you can sign up for their Bread Club and they will literally bring you fresh, delicious bread to your front door for an extremely reasonable price. If you don't live in city limits, you can still participate in Bread Club by picking up your order at one of their designated locations. If you like baking or taking classes, look into taking one of theirs! They have classes for every level so you could participate as a social outing with your friends, or take a more advanced class and really learn how to hone in your skills. They also have seasonal classes which sound really fun! Enjoy your little slice of heaven!

While it says they're closed, I visited today. They're part of Heirloom Catering, and the cafe portion is open from 9 AM - 2 PM. Rebel Sourdough bread is just about perfect as far as the bakery goes. Michelle is very kind and look forward to what Heirloom Catering can turn into. A one stop shop for Colorado grocers. The Rebel loaf, some Sara's Pick of the Coop eggs...

Good morning! I'm not sure how YOUR day is starting but it should start with a delicious parmesan cheese bagel from Rebel Bread!While eating it was a bit of cream cheese/bagel blur, I can tell you it was AMAZING . This awesome little bakery is truly a hidden gem that I'm incredibly thankful to a friend of mine for taking me to. You are greeted by a large display of fresh pastry and bread selections that almost guarantee you won't be leaving with just a bagel. I left with 2. And a raspberry cheesecake Danish. And my friend grabbed the raspberry jam brioche bun and after one bite I was half tempted to have her turn the car around and go back. But we didn't, which just means I'll be making a return trip...soon. There's nothing I love more than supporting awesome local business and they are on my list!! Highly recommend!

I have one word you -- fougasse! Don't know what that is? Then you're missing out big time! It's a version of flatbread originated in Provence, France usually stuffed with olives, cheese and etc. I bought the last olive one and one bite of it, I was in bread heaven! Besides fougasse, this cute bread shop makes really good sourdough bread. Dark chocolate cherry sourdough, anyone?? The brioche bun with homemade raspberry jam was so tasty and I devoured it in one seating. Everything is baked fresh that morning and they also serve coffee! To sum it up, this is a perfect spot for a quick bite to satisfy your bread cravings!

I love the "mom & pop" feel of Rebel Bread - so cozy & authentic. I love that the bakery is literally right behind the register - nothing is hidden, and you can tell they're hard at work when you walk in. We tried a savory danish and a sweet brioche pastry - both were delicious! They even have a small espresso machine and the bakers can whip you up any simple coffee drink you desire right at the counter! All employees were very friendly - they even let us smell some experimental pastries they were trying out. Love the homey & neighborhood feel! I really hope they expand soon, because I really think they'd do well to have some seating & options for patrons to hang out! At the moment, it's just a counter with take-out.

Rebel Bread is great! I hope they expand soon. Everything is made in house, they even offer coffee now! They do have a few chairs outside, but other than that, it's carry out only. Not a problem though, it's great food. I can't wait to go back and try the sourdough and bagels! The staff was friendly as well. Very kind and gracious. Go to Rebel Bread! And if you can't stop in, be sure to support them at buying their awesome food at other local shops.

This bakery is such a gem. I happened across their grand opening on October 21st and was so impressed by the quality of their products and service. The women behind the counter was so bubbly. Even when the place was busy, she had the brightest smile on her face and really made the effort to connect with all of the customers. Their variety of baked goods made choosing something impossible because everything looked so delicious and fresh! Let me just say that their brioche bun with house-made raspberry jam was to die for. The jam was just the right level of sweet and fruit without being too overpowering and the bun was fluffier than a cloud. I even bought a loaf of their sourdough to bring home to New York because it smelled so amazing. It traveled very well and has been a hit with all of my housemates! If you're ever in the Denver area, heading over to Rebel Bread is a must.

Rebel Bread is such a special place. It's homegrown, simple, and in addition to serving DELICIOUS pastries, breads, and coffees, the head baker also hosts pasta and bagel making classes in the kitchen. They're authentically engaged in the community, which is so rare these days. The San Francisco sourdough is unbelievably good -- buy two loaves, because you'll finish the first in the car ride home. Go check it out ASAP.
