"This family-run taquería helped kick off the current wave of regional Mexican cooking in Phoenix when it opened in 2016. Inspired by recipes from Chihuahua, Mexico, co-owners Armando Hernandez and Nadia Holguín serve a lineup of tacos filled with everything from smoky carne asada to slow-stewed barbacoa, plus some of the city’s crispiest, most flavorful tripas. The namesake Taco Chiwas wraps beef, ham, roasted chiles, jalapeños, and melty asadero cheese into one deeply savory package.
