Coastal Italian dishes like eggplant parm, crudo & pasta

"Set inside the reconstructed Jasper with high ceilings and glowing brass details, the dining room feels special and leans fine-dining while delivering approachable Italian plates like Pecorino Ravioli and housemade burrata that can be topped with caviar. Beef carpaccio here—paper-thin beef with celery, herbs, and peanuts—creates an unexpectedly magical Thai-meets-Turin flavor pairing." - Stephanie Burt
"Charleston’s known for seafood, so a coastal Italian restaurant like Costa fits right in. The menu changes often, but we've had great hamachi crudo with the unexpected but welcome addition of blueberries and a plate of shrimp (caught by a purveyor down the road) with sungold tomatoes and calabrian chili. The one thing that seems to stick around (for good reason) is the beef cheek tortellini that’s fortified with braised octopus and bone marrow gremoulata. The warm and grand space with its floor-to-ceiling windows and open kitchen makes this restaurant feel like it could exist in any other big city. But the servers are so damn nice, the southern charm makes the whole operation feel right at home." - jai jones, emily yates

"Chef Vinson Petrillo pulls inspiration from his own Italian family’s traditions for the menu at Costa. Popular starters include the scallop crudo with passionfruit or burrata with a seasonal setup. Try the beef cheek tortellini and then move on to the eggplant Parmigiana, pork Milanese, or grilled swordfish. The dining room and bar are seductive, with some of the best lighting in town — perfect for date nights." - Erin Perkins

"Every critical element of a well-honed restaurant has been consistent at Costa since its opening day. The stately dining room with gilded touches and midcentury modern furnishings is transformative. The staff is knowledgeable and attentive without being intrusive. The food is a testament to chef Vinson Petrillo’s Italian heritage, with bold flavors and precise technique. And the wine always pairs up. Start with hamachi crudo and a seasonal burrata preparation, then move on to fresh pastas, and don’t forget an order of eggplant Parmesan to share with the table." - Erin Perkins
