"Opening December 1, the 4,000-square-foot Camden Spit & Larder (555 Capitol Mall, Suite 100) channels British inspiration and bold design while centering farm-focused, Sacramento-style cuisine from Oliver Ridgeway, the only Sacramento chef to land on the Saveur 100. At the heart of the menu are spit-roasted meats — notably roast beef rib with fermented horseradish and Yorkshire pudding — alongside English-influenced dishes like pork sausage rolls with hot English mustard and vegetable-forward items such as charred broccoli with black garlic soubis, confit carrots, olives, and chermoula; caviar from nearby Passmore Ranch is always on offer. Ridgeway’s pedigree includes seven years as executive chef of the critically-acclaimed Grange Restaurant & Bar and stints at the Carlyle Hotel, K-Paul’s Louisiana Kitchen, and Anasazi, and he’s a regular at Pebble Beach Food + Wine and a two-time leader of the Tower Bridge Dinner. Designer Brendan Koon dressed the 115-seat dining room and 70-seat patio in high-fashion London haberdashery touches — custom chandeliers, patterned taupe-and-black wood floors, pressed-tin ceilings, Windsor chairs, deep blue and red accents, a mix of plaids, pinstripes, patent leather, houndstooth and wingtip fabrics, and 9,214 buttons lining the wood bar — while bar manager Brett Heyer focuses on small-batch spirits and seasonal cocktails such as the Rose & Pea (gin infused with rose petals, English peas, lemon, and Dolin Blanc) and the Smoking Jacket (apricot-infused rye, brandy, Benedictine, and bitters served in a smoke-filled bottle).
