TLDR: Honestly this place has so much potential, but I think they still need to work out major kinks before they can successfully transition to AYCE.
I saw an Instagram ad offering special $19.99 pricing for the all-day menu (regular price: $33.99) for the 4th of July weekend. I looked Seasalt up beforehand and it seemed that it was primarily an upscale, a la carte sashimi/seafood restaurant that has been transitioning to an AYCE menu over the last few months. I had a large party and when we called 1.5 hours ahead of time to inquire if they would take a reservation, the guy who took our call happily accommodated our reservation request and noted we would have to be split into 2 tables which is understandable.
Upon arriving around 5:30pm, it seemed they were no longer accepting new reservations and a line was starting to form outside. They did honor our reservation and the gentleman (whom I am assuming is the manager or owner) greeted us all, made jokes, and gave a bottle of soju on the house to each table (per the Instagram ad, this was part of the special). Throughout the night, he was hyping up everyone, trying to manage the workflow, and pouring drinks for guests including those in line.
However, despite the hospitality, our experience unfortunately fell short. Simply, the kitchen was nowhere near capable of handling AYCE orders for a restaurant at full capacity. When we were seated, we were asked to hold off on any orders until 30 minutes since the kitchen was already running behind from previous orders. Once we were able to place orders, food came out at a devastatingly slow pace. Even worse, the slowest orders to come out were the nigiri. The other table in my party actually never received half of their orders. Although there is supposed to be a 90-minute dining limit, I'm assuming due to the slow kitchen, we were never asked to leave; in fact the server did apologize for the wait when we received the bill. We eventually left after 3 hours feeling very frustrated, and some people in my group were even still hungry and got fast food afterwards. Yes, it was that bad.
It's a shame because I felt that this place definitely has the potential to be one of the best AYCE sushi places in Vegas. The ambience is great, like everyone has said, it's nautical themed and Kpop music videos are playing non-stop. The plating of the food is photoworthy. And, most importantly, the food tastes GOOD. In addition, the menu stands out from other AYCE sushi joints in that there's salmon belly, yellowtail belly, and kanpachi sushi, plus soft shell crab, wasabi cream shrimp tempura, etc. There's a premium menu option that includes 1-time orders of uni, toro, sashimi (with abalone, halibut), raw Korean marinated crab, and more.
I would love to give this place another try, but if they can't operate well during peak meal hours, I imagine potential customers will end up going to one of the many other options for AYCE sushi.
