"All-you-can-eat sushi is no novelty in Las Vegas, but a menu that pairs unlimited fresh oysters with AYCE sushi is far less common — later this month Sea Salt Sushi & Oyster will offer both when it debuts June 28 at 11 a.m. Built by W G Constructors out of a 3,260-square-foot empty space at the intersection of Bermuda and Silverado Ranch Boulevard, the wood-paneled restaurant features a handful of chairs facing the kitchen where, overseen by executive chef Eric Lee, the team prepares seafood imported from the West Coast and Europe. I note its daily hours will be 11 a.m. to 11 p.m. (opening at noon on Sunday), and the menu mixes familiar sushi favorites — sashimi, maki, nigiri, tempura rolls — with grilled fish, noodles, meat and vegetable skewers, and entrees including chicken katsu; appetizers include baked New Zealand mussels and soft-shell crab, and a provocatively named “monkey brain” dish, most probably a stuffed avocado or mushroom filled with cream cheese, tuna, salmon, or crab." - Bradley Martin
