"With its just-fancy-enough salads, pizzas, and pastas—and front row seats to the Fountains of Bellagio—Spago’s business casual vibe is tailor-made for power lunches or double dates. The menu hits the sweet spot between luxurious and familiar, including one of the best cheeseburgers on the Strip: an unapologetically thick patty with melted cheddar and charred onions. The Chinois chicken salad and salmon pizza with caviar were groundbreaking back in the day and they still hold up, even if you’re too young to remember the dishes’ glory days. When the weather’s not scorching, request a table on the patio where you can hum along to “Luck Be a Lady” or “Believe” while the more than 1,200 water spouts dance to the tunes." - emmy kasten, brant cox, andrew ryce
"Why vie for shoulder space on the sidewalk in front of the Fountains of Bellagio, when you can instead watch the show from your dinner table? Wolfgang Puck’s Spago restaurant at the Bellagio faces out over the lake where music and dancing water manifest every 30 minutes. Between showings, enjoy bites of sweet corn agnolotti, smoked salmon pizza, and pan-roasted branzino." - Janna Karel
"Spago still serves the chinois chicken salad and smoked salmon pizza they opened with in the early ‘80s. Unlike some of the music from that era, though, these dishes still hold up. Although it might not scream brunch, the juicy prime burger dripping with melted white cheddar and charred onions is one of the best on the Strip. They also have one of the better patios for enjoying an outdoor meal in the middle of tourist central: the pineapple ginger mojito and some Basque cheesecake taste even better with a front-row view of the Bellagio fountain." - emmy kasten, melinda sheckells, ryan slattery
"Wolfgang Puck’s Spago debuted a new brunch menu with handmade pastas and specialty seafood. Highlights include a gulf shrimp ceviche tostada, prosciutto di Parma and California heirloom melon salad, and poached organic eggs served with smoked salmon, buttered asparagus, and hollandaise sauce." - Janna Karel
"Aside from strapping on water shoes and wading right in (which we assume you know is a bad idea and probably illegal), Spago has the best view you can find of the Bellagio fountains. Make a reservation on the patio and pause the conversation every 30 minutes while a massive amount of water shoots out of the ground. The menu is a bit all over the place, with Spanish-influenced appetizers, seafood towers, and homemade pastas, and can get pretty pricey. But it’s basically dinner and a show all wrapped up in one and you won’t have to put 17 tickets to Cirque du Soleil on your card for after." - milena difiore
