"With its just-fancy-enough salads, pizzas, and pastas—and front row seats to the Fountains of Bellagio—Spago’s business casual vibe is tailor-made for power lunches or double dates. The menu hits the sweet spot between luxurious and familiar, including one of the best cheeseburgers on the Strip: an unapologetically thick patty with melted cheddar and charred onions. The Chinois chicken salad and salmon pizza with caviar were groundbreaking back in the day and they still hold up, even if you’re too young to remember the dishes’ glory days.
