Doesn’t matter here—Tacos & Beer’s seared mahi mahi is just as succulent as the deep-fried stuff. Doradito De Birria Meet some of the best birria in Seattle. Tortillas have ample crunch, consomme is beefy and rich, and the subtle use of cheese is masterful. Have at it. Raja Con Queso We don’t even care that the cheese and sour cream emulsion has a tendency to split. This gooey pile of corn and peppers is freaking delicious. Pastor The key is that the pineapple chunks are marinated with the meat, so the resulting pastor is way more exciting than a taco with some chopped canned fruit haphazardly flung around. A near-black sear on certain bits—and a lovely avocado salsa—makes this one special. Pollo Con Mole Poblano It’s nice to see a non-boring chicken taco, especially slathered in a peanutty mole, sesame seeds, and a scoop of rice. But Linda and Héctor Oropeza’s restaurant is an absolute gem. Tacos here are Baja-style: big and maximalist. The chorizo is made even heartier with potatoes and pinto beans and the carne asada is practically awash in salsa ranchera without losing any beefiness.
