Vietnamese Chinese-inspired Texas BBQ: brisket banh mi, egg rolls

"Umamicue’s residency at Hexe Coffee in Roscoe Village won't last forever, so plan on checking out this pop-up right after reading this. You'll find them hanging out on the patio on Thursday nights, 6-8pm serving their excellent Vietnamese-Chinese-inspired BBQ. The menu changes weekly, but you can expect a few of Umamicue’s staples, like juicy brisket or crispy pork belly. And if their smoked blue crab rangoons or nuoc cham-infused potato salad also happen to be hanging out on the patio, order those too." - adrian kane, john ringor
"Umamicue has had some residencies in a couple of bars throughout the years, but they’re currently serving up their excellent Vietnamese-Chinese-inspired BBQ on Hexe Coffee’s patio this summer every Thursday night, 6-8pm. And if their smoked blue crab rangoons or nuoc cham-infused potato salad also happen to be hanging out on the patio, order those too." - john ringor
"A lauded barbecue operation that blends Central Texas smoking techniques with Vietnamese and Chinese flavors canceled plans to open inside a downtown food hall after repeated management missteps. The owner says he was never presented with a lease, was promised use of a custom smoker that turned out not to belong to the hall, and faced repeated delays to an agreed opening date, forcing him to close two bar-based outposts he had been operating and leaving himself without steady revenue and two former employees out of work. The downtown spot had been pitched as a chance to reach big lunch crowds and move closer to opening a full-service restaurant; after the deal collapsed he pivoted to pop-ups (including appearances at nearby restaurants such as Thattu in Avondale and Bang Bang Pie and Biscuits in Logan Square and a scheduled April 11 appearance at the MCP Rebel Ball), and plans to focus on recipe development while scouting standalone spaces." - Ashok Selvam

"Umamicue is pop-up that uses Vietnamese and other Asian flavors, to produce smoked meats. The pop-up has a residency at Spilt Milk, a Logan Square dive bar. The prime brisket is masterful, and so are the links. Order early. Recently, Umamicue debuted a second location inside Split MIlk’s sister bar in Wicker Park, Little Victories." - Ashok Selvam, Eater Staff
