Chongqing Wan Za Noodles Are Taking Over Menus - Eater NY

"We Noodle, a humble noodle counter located at 134 E. 27th Street in Murray Hill, offers wan za noodles for $12. The dish includes marinated ground meat, yellow peas, and lots of broth, with options to add soy sauce or black vinegar from the table condiments." - Robert Sietsema

Best Dishes Eater Editors Ate This Week: July 22 - Eater NY

"Some new noodles in town originated in Nanchang, the capital of Jiangxi, an inland province northwest of Fujian and southwest of Shanghai. The area is known for the high quality of its rice, so don't be surprised that this dish features delicate rice noodles slicked with sesame oil laced with ginger, garlic, and chiles. Heaped on top, there's ground pork, roasted peanuts, and scallions, for a distinctively flavored bowl of noodles. Other characteristic Nanchang dishes found at We Noodle include soups with beef tripe or pig intestines, and stir-fried noodles with tomatoes and eggs." - Eater Staff

Google
They are awesome I asked for lots and lots of cilantro and look how much they gave me!! Taste is so authentic and so delicious. The wan za noodle (chick pea sauce + rice noodle?) literally transported me back to my cherished memories of first tasting wan za noodle 碗杂面in China maybe 10 years ago. I could actually cry happy tears.

I am not a fan of the thick tomato & egg rice noodles. I ordered from Grubhub and was expecting regular noodles to go with the tomato and egg. Plus the soup of the noodle is Mala which wasn’t what I was expecting. The golden tofu was decent Sliced beef tripe had way more cilantro than anything else, there’s no beef only tripe and it came warm. Not fully flavored.

I ordered Nanchang mixed rice noodles with pork intestines and greens. Overall, I feel that the portion size is a bit small. I don’t have a big appetite, but I still felt it was not enough. In terms of taste, I think it lacks depth—aside from being salty, there aren’t many other flavors

Google
very authentic - very spicy and flavorful, exactly what I expected of nanchang cuisine. slightly small portion but perfect for a meal. everyone was also super nice there! great food for great price.

I’m so happy that I found this place! They have very authentic rice noodles, and a variety of appetizers! The NanChang dry noodle really brought back the old memories from my hometown. Will come back again soon to support Auntie’s rice noodle shop! ❤️

Google
very good authentic chinese food, go there once a week. Just.. the environment needs some improvement, the AC is not very effective, the place smells like hospital, the Clorox smell is too much, people just dont have appetite once they smell that, really like a hospital. Hope you can improve on the atmosphere.

Really good dumplings, only had to wait a little bit too much for one of our orders but overall okay and good prices

Google
Ordered the tofu and it was way too spicy for me (I usually like spicy food) and not eatable. After washing and draining it about 5 times, I could eat it.

Yelp
Ordered a Nanchang dry noodles (南昌拌粉) at medium spice (中辣). not one dud! bounty put, it's stronger than some "heavy spice 重辣" places I've eaten at you can order in-store with either the e-booth or via the cashier

Yelp
Authentic and flavorful rice noodles that remind me of my dads hometown in china! Having lived in NYC for the past 3 years one of the biggest blessings has been having no shortage of new foods to explore but up until now I have yet to find a guizhou style rice noodle place (despite the hundreds of lanzhou noodle places) - but We Noodle definitely more than delivers to fill that gap. I came in 9:30pm friday night after a long day of work and only a few others were left finishing up their meals. The couple that runs the business were also in the middle of their end-of-day meal but they enthusiastically greeted me and asked to take my order. I saw that most of the kitchen equipment were already turned off and even the register and immediately felt bad about coming in late but they assured me they could make me a bowl of the wanza noodles no problem. They even had to wash some dishes in the sink but motioned for me to take a seat. For only $12, the bowl of noodles I got was extremely filling and just the right balance of noodles, ground pork (or beef?), and greens. The noodles were very definitely on the spicier side - I can handle my spice but on the first mouthful I almost inhaled some of the spicy soup and I could tell it wouldve been bad. I learned that the owners are from guizhou, a lesser known province in china and they had opened 2 months ago. The seating area was very clean even at the end of the day and you can see that the open kitchen is too. They are very friendly and the food is both tasty and inexpensive. I'll definitely be back and hope they continue to draw in the clientele that they deserve!

Yelp
The noodles were delicious and very authentic. It was just the right amount of spice and the peanuts added a good crunch. Very recommend!

Yelp
I got a delivery order from We Noodle. They specialize in Jiangxi rice noodles which are more like a Vietnamese rice noodle than a Chinese noodle. The flavor of the noodle dishes is too mild, though I made the mistake of asking for "mild spicy", as well as, getting dry noodles. I think as a soup, the noodles would pick up the flavors much better. I tend to stay away from delivering liquids because half the time it ends up leaking and causes a real mess inside the bag. However, lately, most restaurants are doing a much better job of packing delivery items. In any case, I think this might be a pretty good restaurant if the noodles had more flavor, but I suppose one could say that about lots of places! I got the Nanchang Dry Rice Noodles with Mild Chicken, Beef Dry Rice Noodles, Mapo Tofu, Wanza Dry Rice Noodles, Pork Pot Stickers, Chopped Potato Salad, Cucumber Salad, and Scallion Pancakes. The other dishes were all decent, especially the mapo tofu which was excellent. The pork pot stickers were very tasty. I would recommend trying this restaurant inside. As a delivery order, I would get the noodles as a soup, and not dry. My experience could have been better.

Yelp
The chili wonton and scallion pancake I ordered tasted terrible by any standard. The scallion pancake was so oily, stale and dry like chewing cowhide! The chili wonton is way below acceptance level in terms of quality. It tasted just like left over food!

Yelp
The spicy chicken rice noodle is amazing, very spicy. Always find myself ordering over and over again.
