"Sited on 255 acres alongside the tree-lined Shingle Creek, this Spanish revival–style resort of about 1,500 rooms combines traditional interiors and large windows with a multi-pronged sustainability program that earned a three-palms Green Lodging rating. The property has eliminated plastic straws and cut other single-use plastics, uses recycled paper for printed materials, and runs automated irrigation and HVAC controls monitored monthly. In 2022 it opened a 9,500-square-foot on-site farm supplying seasonal vegetables, herbs, and fruits to two restaurants (one serving season- and farm-driven dishes), and it operates solar-powered guest shuttles alongside hotel-to-theme-park transport; a guest “green suggestions” box invites further input." - Elissa Garay
