I skippedle classiqueand ordered a chocolate-almond croissant (it’s chocolateandalmond—how could I pass?) as well as a kouign amann (why stop now?!), which had an untraditional flat spiral shape instead of the usual flower and was absurdly glossy and caramel-colored. I couldn’t fit these into my body that day, but do not worry: Unlike regular croissants, these were still flakey and light the next day—seriously! It was magic—and among the best pastries I’ve tasted in recent history.
