Reservations open five weeks out and sell out quickly; the tight menu features four ramens plus rotating specials, two rice sides, and add-ons like extra noodles and an ajitama egg. The kitchen counter offers a front-row seat to blow-torched fatty pork, smoky wok-tossed bean sprouts, and the care put into two homemade noodle styles: thin, crinkly noodles for the miso and shoyu bowls and soft, thick noodles for the brothless tantanmen and aburasoba.
