"It isn’t surprising that Hidetoshi “Jack” Nakamura, a legend in Japan and a former development chef with Sun Noodle who helped popularize ramen in NYC, makes some of the city’s best bowls; what is surprising is that alongside a clear-broth chicken shoyu and a straightforward tonkotsu, there’s a mysteriously good vegan XO miso ramen.
