"Blue Taco is an appropriately named blue taco stand, housed in a shipping container at Reffen, often has a line out front consisting of folks willing to wait for its seasonal, gluten-free, blue-corn tortilla tacos. The chef here spent years traveling and working in kitchens throughout Latin America, combining his training with his own culinary point of view. His time in Oaxaca shines through the strongest, with spices, ingredients, and chocolate (for mole) imported directly from that region of Mexico.
