"The wines here are complex, elegant, aromatic, and always a surprise. Bottles don’t hold just one varietal, they can hold nearly a dozen. They’re not meant to be pure expressions of one particular grape, they’re much more complex than that. That’s why they’re simply labeled “red wine” or “white wine” and named after the vineyards. You can nerd out on obscure varietals all you want—or just sit back and enjoy them. Wine tastings come with carefully prepared small plates as a default. Yes, it adds to the price of entry, but it’s entirely worth it. There might be garden-fresh zucchini slowly poached in olive oil until meltingly tender and drizzled in pesto, or caramelized wedges of cabbage draped in prosciutto and bathed in anchovy butter.
