Splendeur du Moyen-Âge L'Abbaye cistercienne des Vaulx-de-Cernay fût fondée par Simon de Neauphle en 1118 (elle devint cistercienne en 1147). Cette Abbaye, connut son apogée au XIIème siècle mais fût détruite après les guerres de religion. Elle fût restaurée au XVIIe siècle, puis lors de la Révolution ses biens furent confisqués et elle servit alors de carrière. C'est au XIXème siècle que la Famille de Rotschild fit construire le manoir de style néo-gothique, il reste aujourd'hui quelques vestiges de l'abbaye originelle. La salle des moines en est une des splendeurs. L'hôtel de luxe qui s'y loge désormais comprend 57 chambres spacieuses et charmantes, dans un cadre exceptionnel avec vue sur le parc.
