"A huge Japanese chain offering straightforward tonkotsu ramen and very little else (though there’s a vegan option), this is an ideal chain ramen restaurant: consistent above all, tasty enough, lower-priced than some competitors, and heavily customizable—from broth salinity and thickness to noodle firmness and how much lard goes on top. It’s easy to settle into a regular order if you go often; here’s mine: Classic, rekka, thin noodles, standard firmness, strong broth, rich fat, a lot of karadare (spice paste), and karashi takana (spicy pickled mustard greens) as an add-on.
